just found this chicken soup, can it be canned?

I just found this great looking recipe for chicken soup. I am trying to ramp up my usually minimal canning and wondered if this soup could be canned. I realize the noodles would prob have to be thrown in when getting ready to cook and eat.

An her site, like yours, is just full of delicious looking recipes. I would love to be able to can this. seems like it should work without the noodles. as soon as my tomatoes start ripening, i am trying out that roasted tomato soup I have seen posted on here. I hope to get some of it canned as well.

I like to put basil in chicken soup. If I don't have noodles I scramble eggs and add a little salt and mix in flour until thick but still pourable. Pour into the boiling chicken broth while stirring. Make it as thick as you want it and it does get thicker as it boils or sets. We have always added cinnamon to our chicken soup after we dish it up. My friends family always added nutmeg but I don't like nutmeg.

I hear ya' about the cooking and more cooking and more cooking...... I bake this Moroccan Chicken recipe instead of grill it...have made it 4 times already, it is that good! Grilled/Baked Moroccan Chicken Good with rice pilaf or couscous and a green salad. 1/2 cup extra virgin olive oil (good quality) 1/4 cup chopped scallions (white part only or chopped onion) 1/4 cup chopped parsley 1/4 cup chopped fresh cilantro 1 tablespoon minced garlic 2 teaspoons paprika 2 teaspoons ground cumin 1 teaspoon salt 1/4 teaspoon turmeric 1/4 teaspoon cayenne pepper 4 boneless skinless chicken breasts or 8 chicken thighs/pieces or leg quarters or chicken halves Optional use 1 heaping TB ras-al-hanout seasoning instead of the ground spices Combine oil, scallions, parsley, cilantro, garlic, paprika, cumin, salt, turmeric and cayenne pepper in the container of a food processor. Process until smooth. Rub the mixture on both sides of the chicken breasts and let stand 30 minutes. Preheat the grill to medium hot. Grill chicken breasts 5-7 minutes on each side, until done or bake at 375 for one hour for half a chicken or 45 minutes for chicken pieces Pizza Chicken Roll-ups - variation from my friend Keren 4 chicken breast halves sliced horizontally into 2 pieces and pounded thin Deli pepperoni very thin slices, 2-3 slices per roll Deli provolone cheese 1 slice per roll Pasta sauce, large jar of Prego or homemade tomato sauce Mozzarella cheese slices, 1 per roll On each piece of pounded chicken breast, layer on 2-3 slices pepperoni and 1 slice provolone cheese. Roll up and secure with a toothpick. Grease a 9x13 or equivalent baking dish. Pour in 1 cup of the pasta sauce. Place rolls in dish and pour rest of sauce over all. Cover with foil and bake at 350 for 30-40 minutes. Uncover and top with the slices of mozzarella then return to oven to melt cheese. Sprinkle with chopped basil or parsley and serve over hot cooked spaghetti that has some melted butter and garlic salt, pepper added.

CREAM OF BROCCOLI SOUP (serves 2) 1 medium head broccoli 1 medium potato, thinly sliced 2 TBL butter 1/2 medium onion, coarsely chopped 2 TBL flour 1 cup warm chicken broth 1 cup warm milk 1/4 cup warm heavy cream Salt & pepper to taste 1 tsp dried basil Cook the broccoli & potatoes in salted water until tender. Set aside 4 flowerets of broccoli for garnish. Heat the butter ina saucepan & add the onion. Cook stirring until the onion is transparent, but not brown. Add the flour & cook, stirring until smooth. Place the remaining broccoli & potatoes in a processor or blender & puree the vegetables. Gradually add the broth & milk. Add the cream a little at a time until the soup is of the right consistency. Return the soup to the saucepan. Add pepper, salt & basil & reheat. Garnish each bowl w/the reserved flowerets of broccoli & serve.~~Simply Superb

Curious what you mean by just broth. Or do you mean boneless chicken parts. Or do you mean canned broth. I make a vegetable stock all the time using vegetable scraps. Both ends of a large onion and the first outer ring with the skins, top and bottom of a whole celery, a couple whole carrots, (they are cheap), parsley stems. Peppercorns, coriander seed, a couple bay leaves, thyme...i usually have green leek tops. I like cilantro stems for that zip-zing. Like Lindac mentioned, poaching your chicken makes a nice delicate broth full of flavor. Using bones gives a much better flavor but still good by poaching with veggies and no bones. Poach chicken in the veg stock, remove when done, let cool while simmering the broth and preparing the soup veggies. Veggie stock just takes 45min-1 hour. Strain stock, (chicken-n-rice soup?), add rice and cook in broth till tender, then add your fresh saute veggies and chopped chicken. It is a very simple clear broth soup. A classic 'ladies lunch' soup in NYC. Light, not fatty. Usually a garnish of parsley and a slice of lemon. Chive sprig, lol.

So, that's a cooking recipe, not a canning recipe, but the basic guidelines for soups with meat or poultry are -

Do not puree any soup or parts of the soup. Fill jar to only half with solids (your chicken, vegetables), the rest of the jar must be your broth. The ratio is important for density, processing/timing, half solids, half liquid. Leave 1 inch headspace.

Do not add noodles or other pasta, rice, flour, cream, milk, egg, or other thickening agents. Add the milk/cream to home canned cream soup 'base' when you've opened it to heat, same with the noodles in this recipe.

60 min pressure canner pints, 75 minutes quarts.

I don't know how the frozen vegetables in the Costco bag would hold up to the pressure canning, if you would like their texture after canning and shelf storage or not. I'm not much of a fan of canned peas myself, but that's my taste :)

The soup looks delicious, and you could always freeze it too.

Can the broth....freeze shredded chicken...put it all together at the last minute...or rather hour.
if you can it it will become "canned soup"...

momj47, I have made homemade egg noodles before as well. They are extremely easy and taste so much better.

I think the "base" could easily be canned in a pressure cooker, following the instructions for "soup" found at the NCHFP site. Noodles cannot be successfully canned, they'd be complete mush, even absent possible food safety problems.

I'd can the chicken/vegetables/stock and then heat it up when needed and toss in the noodles when reheating.

And I see she makes her white chili just like I do! Now if I can just get BF to save the chicken bones. We've started buying bone-in chicken breasts since the boneless has gotten so expensive. He thinks our freezer is too full. Silly boy! ;)
