how can I smoke chicken breasts on a gas grill?

I have looked online and it seems that smoking chicken on a gas grill is do-able. I've got the wood chips soaking, and I understand making a foil pouch for them. Everything seems to indicated it will take and hour to an hour and a half for the chicken to cook. What I don't understand is (a) what is the temperature I should have the grill at; (b) where does the pouch go; and (c) are the chicken breasts over a portion of the grill that is turned off?

Can anyone give me some direction? Step by step. One syllable words. I'm not a griller and neither is DH. We are having a cool day here and it will be a good day to be outside.

Make at least two foil packets. A cup of wet chips, aprox, in each.
I double up the foil and lay the chips in flat...so flat packets.
Poke 6 holes into the top with a skewer or pointed knife tip...just the top.
Place one your flame off to the far side from your chicken.

Not sure about temp or time as every grill is different...
Just keep the lid shut.
The extra packet i would add a half hour into cooking.

Does take experimenting to get it the way you want...and why i like to have an extra packet.

A meat thermometer is really the only way to get a proper temp. Could take 45min or and hour 15min.

I imagine that sleevendog actually knows more than I do on this subject, but she forgot to cover part and some kind of typo hid the other. You put the foil pack directly on the burner cover. The chicken generally is placed on an unheated area of the grill. My grill thermometer broke many years ago. I set my burner/burners on medium low and I can often go 90 minutes or so. I hardly ever do the chips/smoke thing and I usually finish by lightly brushing some sauce on during the last 5 minutes, sometimes with the sauced chicken on the heat for a minute or two per side. It is not necessary. The smoking will probably help but I don't think it should really be called smoking. That is probably better left for a cooler smoker for several/many hours.

slucci, What do you mean by raw? Smoke meat does look red, but not raw. What was the temperature and where did you take the reading? The thermometer should read 180 when inserted in the thickest part of the thigh without touching bone. 90 minutes is quick unless it was a small bird. It normally takes me at least 2 hours with a five pound bird straight from the refrigerator. If using a frozen bird, especially if quickly thawed in a microwave, be VERY certain its completely thawed. It will not cook correctly if the breast is thawed but the centers of the thighs are still frozen. Leave the lid on and do place a drip pan under the bird. Also the bird should not be directly over the coals. Rather the coals should be off to one side either to the front or back, parallel with the spit. I haven't owned a kettle style grill, but I believe bricks are placed under the chicken to keep the coals to the side. carlcarter, You should have started a new thread to change topics. The nature of your questions suggests you do not have the knowledge to run the gas line safely, please hire a professional. If youÂre still tempted to do it yourself remember your insurance company will deny any claims resulting form an improper installation and you could be charged with criminal negligence if someone gets hurts or dies as a result of a leak from your DIY installation.

I have a Weber gas grill and I get a lot of grease in the grease pan...but I also cook a lot of dark meat chicken and pork roasts on the grill. Thinking about it, if the grease pan is underneath the grill, like on my Weber, the type of metal isn't going to make any difference because it's never going to get hot enough to fume. For some reason, I was thinking about those flavorizer bars in my Weber (that sit over the burners rather than having lava rock or ceramic briquettes) when I responded originally. Definitely, you would NOT want those to be made out of galvanized metal and have the fumes permeating your food. Oh, and Webers are fantastic grilling machines. Flare-ups are pretty much history. Expensive grill if you buy new but I found a working grill for only $20. The end casting on the hood was broken so it didn't have a handle. Used it for few weeks until I located another parts grill for $35. Fixed the hood and salvaged a set of slightly used burners and cooking grid for replacements later on. Anyway, just had to tell you how much I love the Weber. This is our 4th or 5th grill, by far the best grill we've owned plus it represents the least am't of money we've ever spent on one. I'm just thrilled with my bargain grill!!

So what did you have? I love chicken Francaise...this is a good basic recipe from Epicurious although I usually wing it and I like the sliced lemon added to the pan. Yield: Makes 4 servings ingredients 4 large skinless boneless chicken breast halves (2 pounds total) 1/2 cup vegetable oil 1 cup all-purpose flour 3/4 teaspoon salt 1/2 teaspoon black pepper 3 large eggs 1/2 stick (1/4 cup) unsalted butter 1/2 cup dry white wine 1/2 cup low-sodium chicken broth 3 tablespoons fresh lemon juice plus 1 whole lemon, thinly sliced 1/4 cup chopped fresh flat-leaf parsley preparation Place chicken breasts between 2 sheets of plastic wrap and gently pound chicken with flat side of a meat pounder or with a rolling pin until 1/4 inch thick. Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking. While oil is heating, stir together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a shallow bowl. Dredge 2 pieces of chicken, 1 piece at a time, in flour mixture, shaking off excess. Lightly beat eggs in another shallow bowl. With that quantity of chicken, I'd do a little bit of everything! Freeze some on cookie sheets and then bag to use whole (grilled or for sandwiches or something). Some, I'd bag with italian salad dressing (or any other marinade) which you can then defrost and grill or broil for a quick dinner. For cooked, cubed chicken, here are a few things I'd make: - chicken salad - chef salad - stir-fry - chicken broccoli casserole (layer cubed, cooked chicken, fresh blanched broccoli, or use frozen, pepperidge farm stuffing in a 13x9 pan. Mix together 16 oz. sour cream, 1 can cream of chicken soup, 1/2 c. milk and pour over the stuffing. Bake at 350 until heated through, about 30 min) - homemade chicken soup - chicken tacos (use a packet of taco seasoning as directed on package, refried beans, lettuce, tomatoes, sour cream and your choice of soft tortillas or crunchy taco shells) - chicken fajitas (packet of fajita mix, sliced green and red bell peppers, sliced onions, serve with soft flour tortillas, salsa and quacamole) - Chicken Cordon Bleu - pound to about 1/4" thick and roll with a slice of ham and swiss cheese. Spatchcock, (otherwise known as "spattlecock", ) the chicken first.

It helps to get better smoke penetration and even cooking.

Be sure to add the wood chips about 20 minutes before you place the bird on the grill so that they are hot and smokin'.

First packet of chips on and timer set for 20 min before I throw the chicken breasts on. How should I season the chicken? S&P? Something more?

The chicken came out great. It was really tasty. Next time, I may brine it before cooking. It was a tad dry. I cooked it to 165 degrees.
