A Few Questions

Hi,

I have been following this forum for many years and have really enjoyed it and have gotten a lot of information from it.

I'm wondering whether you have some suggestions. We recently purchased a small (~20 seat) sandwich shop/cafe with a significant take-out business (and a terrific view). We offer sandwiches and paninis, along with two daily soups, some salads, fresh baked goods done on site. Being frugal we have been accumulating many bread crusts from making sandwiches. The types of bread we have, in order of selling the most are: multi-grain, whole wheat, white, light rye (from the local bakery with flax seeds), and dark rye (also local with a little caraway). Do you have any suggestions for the use of these crusts (and some less than perfect slices)that are multiplying in the freezer? We do make croutons, but cannot use nearly all the bread. One of our staff came across a strata muffin with ham, cheese and egg, which we haven't had a chance to try as yet, which may help to use some of them. Or should I just toss them?

Another area where I am looking for assistance is knives. When we took over this cute place, which carried some baggage, the knives could be ridden to Mexico on and back (from Canada) and not felt a thing. We also offer a panini sandwich which is made on a nine grain triangular bun (similar to what Costco in Canada carries). The bun alone could be cut well with a bread knife, but after the grilling/toasting, we cut the sandwich in half for the customer. Some of the fillings in the panini sandwiches are bacon, veggies, sauerkraut, etc. Do you have a suggestion for a "universal" knife for next to the panini grill that will not hook on to the bacon and pull it out, or pull out the veggies (which are hard enough to keep together)? I have tried the bread knife as well as a serrated knife, but the fillings hook on to the knife and pull out.
