My first try at canadian bacon

I had a nice pork loin in the freezer, 4 or 5 pounds, maybe, and had not yet tried to make Canadian Bacon, so a couple of days ago I mixed up the brine and got started. Elery smoked it today while I was working and it turned out very well. Elery thought it was too smokey and I thought it was perfect, although my picture isn't great:

We cut it into three approximately equal pieces and took the opportunity to use my new Food Saver, and got this, which is now in the freezer:

I thought we should have gotten out the meat slicer and sliced it beofre freezing but Elery thought it would keep better whole, so that's what we did.

Now, I wonder what in the heck I'm going to do with that much Canadian Bacon? Not pizza, of course, and I can only eat so many "McMuffins". Any ideas?
