New here- need roasted chicken help

I've been having a lot of success with roasting a small chicken at 400 for about an hour. Until recently...instead of the "non-hormone, non-antibiotic" chicken that I was roasting, I switched to an organic chicken from Costco. I have trouble getting a thermometer in the right place, so I roast about an hour. These chickens were 4 lbs. I usually roast a 3.5 lb max. The organic chicken is much tougher, cooked the same amount of time, same temp. Any one know what's up with that?
