How's this for a man messing around in the kitchen??

I was going to make Jan a birthday cake, but she didn't want that so I decided to just play in the kitchen today.

For New Years I bought a 12.5lb pork loin roast for $21, but 12lbs is way to much for just the two of us, so I cut it in thirds and made a nice pork roast for New Years,

Today I took another third of that roast out of the freezer, thawed it, then sliced it into 8 boneless loin chops about 1/2" thick and 6" in diameter. I then put them on my cutting board and used a meat tenderizing hammer to pound them out real thin (about 1/8" thick) and set that aside.

I then put 2 cups of raisins in a saucepan and added two cups of apple juice and 1/2cup of white wine and simmered that down for about 1/2 hour.

While that was simmering I made a pot of stovetop stuffing, and as soon as the raisins were plumped up real nice, I skimmed most of the raisins and added them to the stuffing.

I then laid one of the loin chops on the board, placed a big scoop of the dressing & raisins on top:

I then turned the edges up to form little pillows, which I placed cut side down in a glass baking dish.

I sprinkled some paprika & parsley flakes on top for color, then covered with foil and baked in a 350degF oven for 40 minutes.

While that was baking I steamed a butternut squash, then mashed that with butter and a touch of nutmeg, then I added another cup of applejuice to the raisins and heated them up again. When they were simmering good I put a tbs of cornstarch in cold water and slowly added that to the raisins to thicken the sauce, which was later drizzed over the meat when I served it.

Hers it is folks,,, Stuffed pork loin chop, stuffing and squash on the side....

I sliced the meat open for the photo so you can see the stuffing inside.....

Not bad for messing around in the kitchen with no cook book or recipe.
