shredded beef suggestions

I had a double pack of London broils in my freezer that I needed to cook. I ended up putting one in the dutch oven with some beef broth and another in the crock pot with beef broth. Now I have pounds and pounds of shredded beef. I've thought of using it for tacos, barbecue sandwiches and Italian beef sandwiches. Any other ideas on how to use it up? Will it freeze okay?

It will freeze fine.
Can't think of other uses but for what you have mentioned...but I suppose you could use it for shepherd's pie or a beef stew.

I make Ropa Vieja with shredded beef. Here is the recipe, if you are interested, you can make adjustments with what you already have. I don't have a recipe, I just play it by ear.
Flank steak
Beef broth to cover steak
Bay leaf
Onion
1/4 tsp sugar
Garlic
Celery salt
16 oz can tomato sauce
1/4 cup olive oil
1 Tablespoon wine vinegar
1 green pepper, sliced
1/2 tsp oregano
Salt

Cover steak with broth and bring to a boil. Lower heat and cook until tender-about one hour. Cool in stock then shred.

Cook remaining ingredients in sauce pan. Add beef stock and simmer 30 minutes. Add beef and simmer another 30 minutes.

Server over yellow rice.

George, It probably is. I will poke holes in bags of leaves on purpose to allow moisture and air flow. This process can create leaf mold just over the course of the winter, if it is a wet winter like we just had. Nothing has improved my soil more than the leaves. Yesterday I was scooping last year's pathway mulch, which was a combination of shredded leaves and lawn clippings, up out of the pathways and onto the tops of the raised beds. It all is decomposed, so dark brown, rich and crumbly. It always amazes me, even after all these years, that something as simple as shredded leaves and grass clippings layered into pathways all spring and summer will give me such beautiful compost for the next planting season. I never tire of the marvel of it all. Composting directly in the pathways is so much more efficiently than hauling stuff out to an official compost pile, waiting for it to break down, and then hauling it back to the beds, so during the growing season I drop weeds right into the mulched pathways where they decompose along with everything else. I still have an official compost pile too, but I've moved it inside the big garden so I don't have to spend as much time taking stuff to it. That does sound good! Between either the slow cooker or pressure cooker, the meat will be easy to do. I prefer corn tortillas, but I don't think using them instead will be a problem. I don't do well rolling tortillas, so I usually just layer them in a pan. I don't think that would be a problem either. Thanks for the recipe. Sue

I don't know, I just sort of sprinkle it in. I'd say about a tablespoon. You could always add more (or less) if you want to, it's all pretty much to taste. Let me know how it goes!

I use a really lean roast and cut off the fat before I make it. The beauty of this recipe is that you don't have to use the stove! I usually pour off a lot of the cooking liquid before I serve the beef. Rather than cook the meat before hand (which you could easily do), you could cook everything in the crockpot and refridgerate it over night and then skim off the solidified fat. Often do this just out of convenience. Good luck!

Or a Cajun roast beef sandwich, if you have gravy. All you need is crusty bread & mayo. Yes, you can add tomato & lettuce but you NEED crusty bread & mayo. Ladle the gravy over the beef & have lots of napkins nearby.

Shredded beef fajitas is good served with rice, lettuce, sour cream, etc.

I'm thinking the old fashioned Hot Beef Sandwich, sometimes called a "Hot Beef Commercial" sandwich. I usually like the bread toasted, nice thick mashed potatoes and lots of gravy!
