My mom used to save bacon grease. She would soak kidney beans overnight then cook them. Then she would finely dice some onion. After the beans were nice and tender she would mix in the onion and hot bacon grease. If she had bacon, she would use fresh grease and chopped bacon too, which is actually better. But a heart attack waiting to happen. LOL Sure the beans are full of calcium but that bacon and grease.........artery clogging to the max! No wonder we all have cholesteral problems in our family. hehehehe

we don't have bacon grease very often any more, but when we do, we mix it in with the dog's kibble. They love it!

I save my bacon grease specifically for the times when I do cook green beans.
Years ago I used to brush a little bit over the tops of home made biscuits before I baked them. They sure were good, but I quit doing that about 20 years ago.
One more thing, when we were kids my mother would pop popcorn for us using bacon grease for the oil.

cook eggs, veggies, in the dog treats I make, sometimes I'll cook cabbage and sausage in bacon grease too and potatoes were made for bacon grease.

I use it for the suet cakes for the birds. Someone here started me on making them. Can't remember who though. The birds love them!

I only save a small ontainer of it in the fridge. Mostly use it for green beans, or black eyed peas. It really adds a nice flavor to stews and soups. Any warm winter comfort food is good with a touch of bacon grease.
I never used it at all until I moved to Texas in 1981.

When I was a home health nurse I had a patient who saved bacon grease in a can. She stored it near the stove. I told her she should move it to a safer place. She finally did after her kitchen caught on fire.
I use bacon grease in a bread recipe I have.

If you have a cat or dog the grease is good to remove or kill stick-tights on the ears.

I use it when I make shrimp gumbo. I make the roux out of bacon grease. I think it makes the best flavored roux--much better than shortening or butter.

I can remember when we were kids, that Mama would fry up the bacon, then make french toast in a small amount of bacon grease. Yum!

How long does it stay good in the fridge? In the Freezer?

Mine has never soured. I have never frozen it, but have had some in the fridge for up to a year. I use some and then next time I make bacon, I add more to my container.
It has never gone bad. I would never mix another type of grease with it though. My MIL used to and it was heartburn waiting to happen. I think she kept hers in the cupboard rather than the fridge too. Rancid, yuck.

Anything you cook in grease/oil or whatever can and should be cooked in bacon fat. Eggs, burgers, potatoes, vegetables, you name it.

It makes the best gravy, just add some flour to it, until it makes a paste, then add milk.
Also when I fry cabbage I use bacon grease, onions, bits of bacon and of course your cabbage. Yummy! hmm might have to fry up some.

Way back when, there were those little metal coffee pots where you stored your bacon grease in, and kept on the top of the stove. THAT WAS THEN!
I keep bacon grease in the refrigerator.

Great for making milk gravy with lots of pepper.

I save my bacon grease too. I use it in my bisquits a lot of the time. To me, you have to use bacon grease to make milk gravy. It just doesn't taste the same without it. Same thing with tomato gravy....got to use bacon grease. I dearly love fresh water brim fried in bacon grease. Or when you make tomatoes and macaroni....a dab of bacon grease just makes it all...."more better"!!!

I never save it. If I want to use it for something...like Vannie says...shrimp gumbo, or green beans, or whatever, I start wtih fresh bacon and make some that is fresh. If I was going to use it right up, I might save it for a day or so, but
I don't use it that often, so, no, I wouldn't save it.

Yes, I save bacon grease for frying sausage patties & making pork gravy because pork is so lean now. I also have a great recipe for a glorified stew, called French Beef Casserole, from Peg Bracken's I Hate to Cook Book. The recipe calls for browning the beef in bacon grease, then adding canned tomatoes & the juice & canned mushrooms & the juice. Really a good flavor.

I save mine in a small Rubbermaid container in the fridge. (those really small ones). Try cooking some home fries in it. Use a tablespoon or 2 in refried beans. I also take yellow squash, cut it up, cut up an onion and saute the whole thing in bacon grease. Yummy! Don't know what my arteries look like though... :O

Fried cabbage

Ingredients
1 lb bacon, finely chopped
1 medium onion, chopped
2 lbs cabbage, finely diced
dash red pepper flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions
Fry bacon until crisp and well browned.
Drain and set aside.
Add chopped onion to the bacon grease and stir until translucent.
Add cabbage, pepper flakes, salt and pepper, stirring until all cabbage is coated.
Add the crumbled bacon bits and cover.
Cook over low heat until cabbage is tender.

Back during WW2 women not only saved Bacon grease for cooking but extra was taken to the Butcher shops (yes we had them then) and sold for pennies so the govt could use it for ammunition or something I don't know what but it was part of the "war effort"

My mom used BG in just about everything (I never liked it) I would pour it off in a paper lined can and throw out.

I too keep a container of bacon grease in the fridge. Use it in home fries, frying eggs, add it to my cornbread, green beans, refried beans, yellow squash. It makes the best French toast. You sure can't beat it for flavor. You don't have to soak your food in it just add enough for the flavor. I also use it in making my gravy for biscuits which we don't have very often. My mother always had a bacon grease can in the fridge.

Glenda, we love fried cabbage, but I've never heard of adding bacon, etc to it. I love the way yours sounds!

I pour the bacon grease into my empty cat food can, then throw it in the garbage. After reading all these posts, I'm going to have to change my habit!

Greasing baked potatoes.

Used to. Apparently, I didn't use it enough- opened it one day and it smelled like soap!Figured if I used it that rarely, we wouldn't miss it. If I make bacon, I will use some of the grease to cook eggs and if I know I will be using it in a couple of days, I will keep it. Otherwise, it goes into the trash. Oh, and if the cats find it while I am waiting on it to congeal, I will find paw and tongue prints in the grease!

Coworker brought me this one time when I was sick with a cold! She put other stuff with it as well. Didn't tell her I threw it away :o)

At the first sign of a cold, make a 'bacon plaster' for your child to wear day and night, especially to school. Take a slice of fatty bacon cut off the joint, place between two pieces of muslin or cheesecloth, and attach it to his chest with tape. He may protest at the smell, which can be potent, but the bacon keeps the chest clear, and wards off congestion

Basic ingredient for Beef Stew Gaston, also for sauteing mushrooms. Bacon grease is a staple in Southern kitchens, and especially in Texas. I have a small container of it in the fridge, and often take a tablespoon or two to saute vegetables such as onions, broccoli, etc.
Use your imagination, and your bacon grease!

Am I the only one that uses bacon grease in my CORNBREAD? I also use it to fry potatoes and cabbage. I have one of the little "coffeepot" containers that was mentioned. Bought it from a lady at the flea mkt. that sold RADA knives (those are another staple in my kitchen!!)

I don't have bacon very often but whenever I do make some I add the grease to a mug I have in the freezer. I usually give some to the birds and I use it when I make hash browns or fried potatoes for a Sunday breakfast.

I remember my dad used to fry bread in bacon grease and used some when making his "red lead" (fried stewed tomatoes). My friend Vicki and her family put bacon grease on their bread like peanut butter (yuck)

Potatoes fried in bacon grease is the best! (Maybe not healthy, but exceptionaly tasty.)

Its a good flavor for poppng corn, however, there is a fine line between the grease smoking and not hot enough.

Old fashioned white gravy can be made with bacon grease.
In the fry pan, brown small bits of meat with a little bacon gease, then add more bacon grease and white flour, mix and add milk and contiune to stir until the mix is smooth. (The flour will tend to clump.) Heat to boiling, and then simmer until the gravy thickens. It requires stirring often to prevent sticking. Serve and add salt and pepper to taste.

Some cooks prefer to add salt during the cooking period. If you do this, go light with the salt so that the comsumer can add salt to his taste. Once there is too much salt, it can not be saved.

My mom used to always have a container of bacon grease and she used it all the time. I rarely cook bacon, as we're not big breakfast folks in my family. But...I'm going to fry some up and use both the bacon and the frippings in those grean beans I'm cooking.

Oops...it's early. I meant drippings...not frippings. I guess these cooler Florida temperatures and my aging joints don't get along too well...lol!

I read somewhere before the holidays that people from the South used to make the 'chex mix' with bacon grease.

I keep mine in a mason jar in the refrigerator.

I had forgotten about fried cabbage. I do use it for that as well as green beans.
I quit making gravy to go on biscuits from scratch a long time ago when someone told me about Pioneer brand peppered gravy or country gravy mix. It is so good and only takes a minute to make.

I used to use it for all vegetables and for corn bread, but stopped a number of years ago to try to make things healthier.

Oh man.....we have bacon maybe once or twice a YEAR. I couldn't imagine using bacon grease in other foods.

Bumpkin, mother always heated bacon grease in her cast iron skillet, then added it to her cornbread mix, then poured into skillet to cook!
