Good question! My son and daughter-in-law are coming for dinner at 6:30. I was making a favorite dish, Monastery style lentils, figuring we'd have that with a salad and popovers. But at 5:00 p.m. I remembered Monastery style lentils is definitely not a favorite of my son's. Oops! Quick change of direction. Now I'm making tofu and broccoli over spaghetti. No popovers. Date-Oatmeal bars for dessert.

My creamed spinach Creamed spinach 2 packages frozen spinach, (10 oz each) 6 ounces cream cheese, softened ^^I use fat free 1/2 cup butter, melted, divided 1 cup seasoned bread crumbs Dash of nutmeg: optional PREPARATION: Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter and nutmeg. Spoon into casserole dish. Toss remaining butter with breadcrumbs and add to top of casserole Bake at 350 degrees for 25 minutes. Serves 4

Just put frozen chicken breasts on to cook for chicken and dumplings.DDIL came in and asked if I had already planned supper and I told her what I was doing.She said she had been wanting spaghetti.Sooo,spaghetti is a lot easier,cook spaghetti,open jar of sauce,I'm done.Out of the kitchen a lot faster too.LOL So I will cook the chicken and have it tomorrow.I wasn't really in the mood to make dumplings anyway!
