Lemon Coolers

1/2 cup powdered sugar
1/3 cup sugar
1/3 cup shortening (I used butter)
1 egg
1/2 teaspoon vanilla
1/8 teaspoon salt
1 1/2 cups cake flour
1 1/2 teaspoons baking powder
1 tablespoon water (next time, I will use fresh lemon juice instead of water)
(I also added 1 teaspoon of lemon zest to the dough)

Lemon Powdered Sugar
1 cup powdered sugar
rounded 1/2 teaspoon unsweetened Kool-Aid lemonade drink mix (next time, I will try 1 teaspoon grated lemon zest instead)

Preheat oven to 325 degrees.

Cream together sugars, butter, egg, vanilla, and salt in a large bowl. Add the flour, baking powder and 1 teaspoon of lemon zest. Add 1 tablespoon of water (or lemon juice) and continue mixing until dough forms a ball.

Roll dough into 3/4-inch balls and flatten slightly onto a lightly greased cookie sheet (I used parchment-lined baking sheets). Bake for 15 to 18 minutes or until cookies are light brown.

As cookies bake, combine 1 cup powdered sugar with the lemonade drink mix (or 1 teaspoon of lemon zest, or both) in a large plastic bag and shake thoroughly to mix. When the cookies are removed from the oven and while they are hot, add 4 or 5at a time to the bag and shake it until the cookies are well coated. Repeat with the remaining cookies.

Rusty, I used Google to search for Garden Web Lemon Cooler Cookies Lori. I found a link to a thread where a lot of folks were discussing Lori's cookies, but no recipe.

Then somehow, I stumbled on a thread and discovered that her User Name is lorijean. When I used "lorijean" instead of "lori," a likely thread, the one about desserts, came up.

After that I used the "find" feature on my browser tool bar to search the thread for "Lori." She sure did post a lot of good looking recipes on that dessert thread!

Bbstx, I 'Googled' the same way.
No luck either,
But I did find the same (I think) thread you found,
A lot of people discussing the cookies.
That's how I came up with the name 'Lori'.
But I never did come up with that dessert thread.
So again, thank you!

I did make the cookies today.
They were every bit as good
(or better)
than they sound.

I did put the lemon zest in the batter.
But not in the powdered sugar coating.
I thought it might be a bit much.
Also, all I had on hand were duck eggs,
And I wasn't about to make a trip to the store
just for eggs.
Even the smallest duck egg was quite a bit larger
Than an extra large chicken egg.
So I omitted the Tblsp of water or lemon juice.
Even so, the batter was awfully soft, I thought.
So next time I will be sure to have hen's eggs on hand.
And I will put a Tblsp of lemon juice in the batter.

sally2, I can't take credit for the noted substitutions. That was Lori's recipe copied verbatim. But I agree with her substitutions.

Rusty, do you have duck eggs on hand because you raise ducks? I was reading BraveTart's blog the other day and noted that she was getting a delivery of duck eggs. It sounded as if they were a normal part of her provisions delivery. I was curious if they are better for baking. (Could you have substituted the duck egg by beating it lightly and then weighing out an amount equivalent to a hen's egg?)

Bbstx, no, I don't raise ducks.
But I have a very good friend that does,
And she very generously shares the eggs with me,
She knows how much I love them.

I can't answer your question about baking with them,
These cookies were the first time I've tried it.
I am very selfish with them,
And mostly just eat them soft boiled.
They have much larger yolks than hen eggs,
And the yolk is my favorite part.
And being organic and free range,
Both color and flavor are wonderful!

As for lightly beating one
And measuring out part of it,
I'm sure that could be done.
But that would leave some duck egg to go to waste,
(I'd probably put it in the frig & forget it).
And to my way of thinking,
They are far too good to waste even a drop.

And I really don't think the extra egg
hurt a thing in the cookies.

Wouldn't using zest in the powdered sugar for coating
Cause it to kind of 'clump'?
I didn't think that would look as nice.
The Koolade powder makes a nice smooth coating,
And a very good lemon flavor.
Lots of 'pucker power'

Rusty, you sound like me. If I put a bit of something in the refrigerator or pantry, thinking I'll use it later, I'll invariably forget that it's even there. It gets pushed to the back and lost until it's far too late to use it.

I love anything with lemon in it, so the cookies sound delicious, but I have that same "allergy" and if the kids aren't here, I'd eat them all myself.

The only duck eggs I had tasted "fishy", but I think that was due to their access to the farm's pond and copious amounts of weeds, snails, bugs and other "water things"...

Annie, my friend has been sharing her duck eggs with me
For several years now.
I've never had one taste 'fishy'.
That would be a real turn-off! ! !

I do know her ducks have access tot he same pond her pig does.
I'm sure they get their share of whatever bugs
and/or other 'wild life' might be around.
Maybe different breeds of ducks have different tasting eggs?
I don't know.
I think she has 2 or 3 different kinds of ducks.
But I have no idea which ones the eggs are from.
I'll have to remember to ask next time I see her.
