What's for dinner Monday?

We're having (hohum) the rest of last night's spaghetti squash with meatballs and garlic toast. I did make a buttermilk coconut custard pie this afternoon. First time and I hope it tastes as good as it looks.

Great chicken and dressing casserole and navy beans.

This time two weeks from now I'll be dressing for second night sailing early dining! Probably prime rib! Dessert: chocolate lava cake

I played bridge this afternoon so it's leftovers for us also, but I love lasagna.

Rhizo, Happy Anniversary! I made potato salad and 15# of ribs on the smoker. DIL brought beans and rice DS made his pretzel sticks, DD brought fruit salad and cool whip and soy milk to make chocolate pie with the pudding mixed DIL brought. I had the graham crust. I have leftovers! DH had to work this afternoon but worked hard before he went by getting the ribs ready and on the smoker and our big canopy put up so we had shade for the day. Tami

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

Glenda, that chicken and dressing casserole is probably better than anything you could eat cruising! Sounds delicious. But so does prime rib!

Hi Georgysmom, JMHO, but I think most things taste better the second day anyway. Enjoy!

My chicken and dressing was just BSCB topped with Stovetop stuffing, cooked in a crockpot. I heated up leftover noodles, and steamed some corn to go with it.

Now, if I could top that off with a piece of Patti's pie, I'd be a happy camper.

Shirley, I really like Stovetop. I add extra sauteed celery and onion and extra broth and it's delish! Come on down. The pie was really good but a little on the sweet side. Next time, I'll cut back.

Pam, how do you do your short ribs? I'm thinking you're talking about beef SR's, right? Got any mashed potatoes left over???

Glenda, those boys! I know if I took my GS on a cruise it would be the same thing. Beef every night. Gotta love those sweet boys, though!

Oh I made short ribs yesterday, Pam, hope yours are as good as ours were! They are one of my favorite meals! After I removed the ribs I added in ox tails, a half dozen or so marrow bones and cooked it all very slow.

I put it all into my stock pot with bay leaves, onions, celery, garlic and carrots. Cooked it all down, cooled it, defatted it and added mushrooms, maters, green beans, corn and the kitchen sink.....browned some chuck roast and tosed that in too!

So we had Veggie Soup!

Everyone's meals sound wonderful. Mike and I are traveling to FL in our motor home. Right now we are in LA with 2 more days to travel.

For dinner last night we had lemon chicken, steamed rice, corn and pears for dessert.

We had Cheesy Ham and Noodle Casserole made with some leftover Carando Ham, and we're still eating green beans which I froze last summer.
