Sugar won't counteract salt...just make a bad situation worse. My fix would be to add more cabbage....another might be to drain the slaw and add new dressing without salt.

Here's my favorite sauce recipe....and you can omit the bourbon if you wish....or substitute brandy or rum. But it's good even without the booze!
Whiskey Fudge Sauce
4 oz. unsweetened chocolate, coarsely chopped
1/2 cup brown sugar
1/4 cup granulated sugar
3/4 cup heavy cream
1/4 cup light corn syrup
2 Tablespoons butter
1/2 teaspoon vanilla extract
3 Tablespoons bourbon
Combine first 5 ingredients in a microwavable bowl and microwave about 3 minutes, whisking every minute or so. When the mixture has tickened some, whisk in last three ingredients.

I think Linda's advice to drain the cabbage and start with new, unsalted dressing is the best idea.

As for chocolate sauce, I can personally vouch for this fudge sauce from Sol. The name tells it all....yes, it's THAT good!

Oh-Merciful-Heavens-Hot-Fudge Sauce
Sol's recipe

6 tablespoons unsalted butter
1 cup heavy cream (whipping cream)
1 cup light brown sugar, packed
3 tablespoons light corn syrup
1 cup sifted cocoa
1 tablespoon vanilla extract
¼ teaspoon salt

In a large saucepan, heat the butter and cream over medium heat until the butter is melted and small bubbles form around the edge of the pan.

Whisk in brown sugar and corn syrup. Continue to cook until the mixture is smooth and no grains of sugar remain. Add the cocoa, vanilla and salt. Whisk again until smooth. Strain mixture through a fine sieve. The sauce will keep for several weeks.

There is no such thing as oversalted cole slaw, as long as it is the vinegrette variety LOL. But if you really think it is, drain it and even rinse it, then drain it again really well before redressing it.

I made this hot fudge sauce recently for an ice cream party and it was fantastic. I tripled the recipe (for 50 people) and kept it warm in a crock pot.

Ingredients:

* 6 ounce package semi-sweet chocolate chips
* 2 tablespoons butter
* 1 can sweetened condensed milk
* 2 tablespoons water
* 1 teaspoon vanilla

Preparation:
Over medium heat, melt ingredients. Cook for 5 minutes, stirring constantly. Refrigerate leftover hot fudge sauce.

When I make a boo-boo and need to try diff. possible solutions, I find it easier to just take a small portion out of the bowl and try correcting it that way before possibly ruining the whole amount all over again.

I would rinse the slaw and place in your salad spinner. Start over with the dressing.

Thanks all for the suggestions! I had both a friend and my DH taste the slaw and they said it was fine, but now I know what to do if it happens again. And since I am a chronic over-salter, I'm sure it will :)
