What's for dinner Sunday?

Quiet Sunday so I piddled in the kitchen. I made a ham loaf with brown sugar/pineapple glaze, sweet potatoes with coconut milk and ginger, creamed spinach and little dill rolls (made with canned biscuits). Harry will think he went to heaven since those are a few of his favorites. Of course, just about everything is his favorite (thank goodness).

Glenda opened her food kitchen, today.

Same ole as last week. Baked sweet potato and Italian sausage link from Fresh Market.

Wahhhhhh! tis the end of the fabulous potato from FM. Guess the season is ending. I paid almost $2 for that one potato. Yikes!

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Kittiesmom, here is the recipe. Sharon didn't include a name, so I named it... Lima Beans Sharon KT 1 pkg of frozen Fordhook Lima Beans 1 small onion. diced finely 1 sm. jar of chopped pimentos-drained 1/2 cup sour cream-room temp 1 stick butter Melt butter in a saute pan & add the onions & pimentos..gently cook until tender. Meanwhile, cook the limas per pkg directions, & drain. Add the hot limas to the onion mixture. Gently stir in the sour cream & add salt & pepper to taste-don't be stingy w/the seasoning. You can add a little more butter if you care to, at this point. NOTE: This dish must be prepared just before dinner-serve immediately once you add the sour cream. DELISH!!! It is definitely DELISH!!! I gave my DD a "sample" of it today, and she loved it and asked for the recipe. I see Sharon has posted a recipe for Super Delish Baked Pork Chops. Can't wait to try that. Thanks, Sharon. Sue

Shirley, that coney dog is calling me! Glad the snow and ice are gone so you can get out and about! Jasdip, did your team win? I haven't been keeping up with the Olympics. My bad! I had 5 large baking potatoes that needed to be used so I made them into twice-baked potatoes. Baked the potatoes, scooped out the pulp, mashed it with butter, milk and sour cream. Added shredded cheddar, sliced green onions chopped parsley and some chopped bacon. Topped with more cheese and bacon. Put them on a cookie sheet and they are in the freezer before being stored in bags and run through the Food Saver. They sure look pretty! Sue, glad you are able to get out again. Lunch sounds great. Little Alyssa will soon be a 3-year old. It's a great age. I've never had Captain D's but it looks a lot like Long John Silvers. Glenda, I really like Thai coconut soup, but the rest of your meal sounds even better.

Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

Thanks for reminding me of your Dill Rolls! I've made them a few times and forgot about them!

5 Hour Stew here and it's smelling very good!
We still have peach cobbler left.

Glenda, FM has the freshest, best produce I bet it was worth every penny for that sweet potato.

Lynn--or should we call you Chef Lynn? What a delicious sounding dinner.

Nodakgal, are you near Fargo? If so, stew would sure be welcome on a cold evening. What do you put in yours? I usually just do carrots, onions, celery and potatoes. Not too daring when it comes to stew. Wish we had some dessert!

I had a Stouffer's spaghetti and meat balls which was very good.
Glenda I've had a couple of delicious Sweet potatoes that come wrapped and you stick them in the Microwave for 4 minutes. love them and have a few bakers prepared the same way for tomorrow (from the produce dept)

I'm about 2 hours away from Fargo Patti. It was beautiful this afternoon about 35 and sunny. We are in for some really cold stuff next week and I am not looking forward to it. The older I get the bigger wimp I am!

Leftover hamburger patty from last night and a baked sweet potato and left-over cole slaw. Really exciting, but it was filling.

I can't find a picture of this potato, but it has a very deep dark skin, and the flesh is a bright orange. It doesn't need anything on it, even butter. The bins were close to being empty, yesterday, so the pickins were slim.

I sure enjoyed this one today. It's organically grown, that I know.

Anyone know what the name of it might be?

Stew with a tomato sauce base, hunks of beef, potato, and carrot. Also rice. Dried onion, etc for flavoring. I'm not an adventurous stew person either. Homemade whole wheat biscuits. It seemed like a good thing to make on a snowy winter day.:-)

Sweet and Sour meatballs, Shrimp tempura, shrimp cocktail. cocktail hotdogs, mini quiche, deviled eggs, dip, tomato picks with mozzarella and pepperoni, ham and cheese tartlets and I'm sure I'm leaving something out. Went to Wine and Cheese tonight and then came home to watch the Golden Globes.
