What's for dinner Friday?

I have extra turkey left after I made the turkey/gravy last night and had puff pastry I needed to use, so tonight we're having something I just made up. I love the turkey, cranberry sub Publix sells during the holidays, so I'm making a take-off on that. I'll let you know later :-)

What are you having for dinner tonight?

Here's the fudge upside down cake recipe I made the other day. I've been making it since I was a kid because we always had all the ingredients at home (except the nuts, and I still don't add them). I don't sift the dry ingredients--just stir them together.

Fudge Upside Down Cake

3/4 c. sugar
1 Tbsp. butter
1/2 c. milk
1 c. flour
1/4 tsp. salt
1 tsp. baking powder
1-1/2 Tbsp. cocoa
1/2 c. chopped walnuts (optional)

Cream the sugar and butter. Add milk and beat until smooth. Sift flour, salt, baking powder and cocoa. Add to creamed mixture. Pour into a greased/floured 9x9" pan. Sprinkle with nuts, if using.

Topping:

1/2 c. sugar
1/2 c. brown sugar
1/4 c. cocoa
1-1/2 c. boiling water

Combine sugars and cocoa; sprinkle over cake batter. Cover with hot water and bake at 350 degrees for 30 minutes. Cool in pan. Serve with ice cream or whipped cream. Yields 8-9 servings.
