I'm just figuring this machine out, and sometimes I do bake the dough in the oven because it just seems to come out better. But this particular recipe (Beth Hensperger's Scandinavian Rye) came out terrific baked in the machine (even the crust was great), so I figured, why bother :) I've also been toying around with storage. This time I put the cut side down on a cutting board and placed a tea towel loosely over the bread (with our dogs, I don't leave anything uncovered). It worked great. This bread really puts supermarket brands to shame. Now, if I could just figure out how to cut nice, neat, portion-controlled slices! Sue

I am going to use the pre-baked puff pastry idea myself in the future. Here is a to-die-for recipe for chicken potpie from Ina Garten. When I made it, I just used a "red box" pie crust (I'm so NOT a baker). I baked the filling as a whole double-crusted pie. Even though I used a deep dish pie plate, I had filling leftover. I froze that. Can't remember if I've used it yet or not - I'll have to go look lol! Ingredients: 3 whole (6 split) chicken breasts, bone-in, skin-on 3 tablespoons olive oil Kosher salt Freshly ground black pepper 5 cups chicken stock, preferably homemade 2 chicken bouillon cubes 12 tablespoons (1 1/2 sticks) unsalted butter 2 cups yellow onions, chopped (2 onions) 3/4 cup all-purpose flour 1/4 cup heavy cream 2 cups medium-diced carrots, blanched for 2 minutes 1 (10-ounce) package frozen peas (2 cups) 1 1/2 cups frozen small whole onions 1/2 cup minced fresh parsley leaves For the pastry: 3 cups all-purpose flour 1 1/2 teaspoons kosher salt 1 teaspoon baking powder 1/2 cup vegetable shortening 1/4 pound cold unsalted butter, diced 1/2 to 2/3 cup ice water 1 egg beaten with 1 tablespoon water, for egg wash Flaked sea salt and cracked black pepper Directions: Preheat the oven to 350 degrees F. Place the chicken breasts on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken. In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and heavy cream. Add the cubed chicken, carrots, peas, onions and parsley. Mix well. For the pastry, mix the flour, salt, and baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Divide the filling equally among 4 ovenproof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the side, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot. seagrass

Here is my recipe for Spanikopita. Delicious stuff and it freezes beautifully. I always try and have some in the freezer for unexpected company or a treat for the two of us. Just keep the sheets covered and you'll be fine. If it tears a bit don't worry. There are lots of folds to hide it. Sharon's Spanikopita recipe 16 Oz Phyllo Dough Thawed in the fridge For 24 Hours 10 Oz Frozen Spinach Thawed and of all liquid Drained 3/4 Lb Feta Cheese 1/2 Lb Cottage Cheese - About 1 Cup Pressed And Drained 1/4 lb Cream Cheese Softened 3 Eggs 1/4 Cup Fresh Dill Chopped Fine Salt Pepper Nutmeg 3/4 Cup Butter Melted In large bowl combine all ingredients except phylo and butter. Working with one sheet of phylo at a time, brush with melted butter and cut in 5 strips lengthwise. Place 1 spoonful of mixture at the bottom of each strip about 1 inch from the bottom,fold the bottom piece up over the filling and then fold up into~triangles. Fold like you fold a flag, to the left, up , to the right ,up etc. These can be made ahead and frozen for up to three months. When ready to cook: Place on a baking sheet and bake at 350 for 20 minutes or until golden. Serve warm I made these for a Chinese Cook Up last winter, they are very good . They Lose some of their crispiness but still taste great when reheated. Spring Rolls - Rachel Ray Via Woodie 1 Tbl vegetable oil or olive oil 1/2 red bell pepper chopped fine 2 stalks celery from the heart chopped fine 6 water chestnuts chopped fine 1/2 small onion chopped fine 1/4 Cup fresh bean sprouts a handful chopped 2 (6-ounce) cans lump crab meat drained flaked - or - 12 Oz Cooked chicken 2 Tbl dark soy such as Tamari 1/2 Tspdried thyme leaves eyeball it 4 (13 by 17-inch) sheets defrosted phyllo dough 3 Tbl melted butter Preheat oven to 400 degrees F. Add oil to a preheated skillet over medium to medium high heat. Saute pepper, celery, water chestnuts, onion 2 to 3 minutes. Veggies should still have a little crunch. Transfer to a bowl.Add bean spouts, crab, soy and thyme. Combine well with a spoon. Paint half of a sheet of phyllo dough with melted butter and fold sheet in half. Pile a few spoonfuls of filling 2 inches from the bottom of sheet and leaving 2 inches at either side of sheet. Fold bottom flap up and side edges in, then roll up and over until you reach the top of the sheet. Your pastry will look like a spring roll. Touch the edges and sides of your roll with melted butter and place roll seam side down on a pastry sheet. Repeat with the remaining sheets of phyllo dough. Bake in the center of the oven for 15 to 20 minutes, until lightly golden all over.

I'm not a salmon expert but we live in Seattle and eat fresh (summer/fall) and frozen salmon (winter/spring) weekly. We only eat wild caught salmon from the Pacific. I have always been disappointment in the flavor of Atlantic salmon I've eaten. From my experience the color varies across species. For example, sockeye has the richest darkest color. King is often lighter. The color does seem to affect flavor, but I think the most important factor to my palette is freshness. The fresher the wildcaught pacific salmon is when eaten or frozen the better it tastes. We buy frozen from a local vendor that fillets and freezes on the boat so the frozen when defrosted still tastes great. The other thing is not to overcook it. I find defrosted frozen salmon takes less time to cook. If you live somewhere that does not have good access to really fresh salmon then I'd buy frozen and try and source boat processed salmon. I haven't tried Costco salmon but they are a Seattle company and I do think they source, in general, pretty good quality products. If you like it then really that's all that matters. Also, largely you get what you pay for with salmon. The exception is that if it's the first of the season it's a rip off and if it's the height of the season it's a great deal. But wild will typically cost more than farmed and Pacific probably more than Atlantic and those price differences are worth it IMHO.
