If you are looking for "a small can of green chilies" or something like that for a particular recipe, then it is probably refering to the ones sold under the brand name Ortega or El Paso or something like that. They come in 4 oz cans. I have several recipes that call for a can of diced green chilis and that is what I use.

If you are looking for a fresh green chili pepper, then there are a lot of varieties, but you could probably use ancho or anaheim (they are readily available in my area, not sure about where you live).

I guess you could use jalapenos but they tend to be hotter than the regular canned green chilies. Chipotles are smoked jalapenos and they can be quite spicy too.

I've been looking in the grocery stores for green chilies, but all I can find are the green jalapenos and chipotle peppers. I'll keep looking!

I grow anaheims and roast, peel and freeze to use in place of 'green chilis'. They are very similiar and may be the same variety.

If your grocery store has an aisle for ethnic foods, check there. I usually find cans of green chilis with salsa, refried beans, etc.

Also look in the pickle aisle - when a recipe calls for cut up chilies. I use the pickled sliced chilies found in a jar (like pickles)- I dice them. I buy BIG jars of these chilies - I use them in many recipes where it just needs a touch of hot.

I use canned chilies all the time because they're so convenient (although roasted fresh peppers are really good,too). They're always right by the taco shells and canned refried beans. The can size is quite small: 4.5 oz.

With dozens of different varieties to consider, there are probably some which don't abide by the general rules (like the ones that end up purple, for instance). But, generally speaking, most chillies go through a colour change as they mature on the plant. They start off green, then change to yellow, then orange, then red - at which time they are fully ripe.

Again generally speaking, the riper they are, the hotter they become. So a green chilli won't be as hot as a red one.

Certain varieties are traditionally harvested and used when green/under-ripe (such as jalapenos), others are traditionally harvested and used when red/fully-ripe (paprika or cayenne).

I'm not an expert in cooking with chillies, since my tastes for 'heat' are very conservative and chillies in my garden are more decorative than useful to me, but whenever I see 'green' chilli in a recipe, I take it that the final product will be milder in taste than if red chillies were used - always depending on the variety of chilli you're using, of course!

You can find out the 'hotness' of different chillies by consulting a Scoville chart. There are many on the web, but here's a short one which I selected at random from a google search.

Khandi, The Superstore should have them. I've bought them out here in the Superstore. And I know I didn't have a problem finding them when I lived in Sault Ste. Marie either. Can't remember what area of the country you live in.

Khandi, both the Superstore and the No Frills have them here. The Independent at the cottage, in Haliburton, has them too....ask someone in the Superstore, they have to have them they are a very common product.

The nomenclature of chiles, like much of gardening, produce and food terminology can be confusing and misleading. Without trying to cover everything related to chiles, the term "green chile" almost always refers to the large, mild ones such as Anaheim, NuMex and Poblano (aka Ancho, which more correctly refers to the ripe stage of a Poblano). All, or nearly all, chiles go through a green stage, but "green chile" does not refer simply to the color, as in a green jalapeno. It refers to specific types of green chiles.

It does NOT refer to any pickled (aka as escabeche) chile. Pickled chiles are a condiment like pickles and don't work in a recipe calling for "green chiles" any more than a cucumber pickle works in a recipe calling for cucumbers.

The ones in the little cans labeled "green chiles" (containing no vinegar in the ingredients) are the right ones, unless you get fresh Anaheims, NuMex, Poblanos, or Anchos. Even then, to be exact, it refers to large, mild, green chiles which have been roasted and peeled as the canned ones have.

I live in Sudbury. The only "peppers" they have at The SuperStore and Food Basics are the jalapeno and chipotle, which is why I asked if this was considered "green chilies". LOL

I'll keep looking and will ask if they could order some.

I looked forever for sweet chili sauce (not the Heinz Chili Sauce) like the one they serve at Swiss Chalet with the dry APPETIZER ribs. I finally found some at The Superstore and Costco. The one at Costco is from Thailand and the one at the SuperStore is from Alberta (I bought this one). DH and DD love it! The same company also makes a jalapeno dip that looks just like the sweet chili sauce. There are no preservatives or "junk" in the ingredients. The brand name is "Gourmet Delight" at a cost of $3.99 for 300 gram jar. A little pricey maybe, but worth it! The one from Thailand was a big bottle for 50 cents cheaper but had ingredients that I couldn't pronounce! LOL

Ahhh, those roasted green chiles .... positively addictive. In the Fall, around here, most grocery stores have a chile roaster out in front, and they roast them in 20 or 30 pound batches. The smell of roasting green chiles is one of those smells that draws you to it. ;-) One of my favorite vegetables.
