Japanese Cooking, Anyone?

Is anyone a fan of Japanese cuisine?

I have been trying to learn recently. Back in 1994 I bought a very good cookbook, "Japanese Cooking, A Simple Art", which I pulled off the bookshelf and dusted off. Spent an evening reading, then stocked up on necessities at the local Japanese market. Kelp, bonito flakes, miso paste, mirin, sake, ponzi sauce, wasabi powder. I had other staples - soy sauce, rice vinegar, ginger - from my Chinese cooking. And started trying dishes.

So far I've made various simple dishes, trying a few recipes from each method of cooking. Dashi and miso soup, egg drop soup (beaten eggs drizzled in hot dashi), tamago (rolled omelette), teriyaki sauce (I don't like the commercial stuff) and various teriyaki dishes, tempura, some simmered fish dishes.

It has been a little difficult for me to adjust to the simplicity of the recipes, the rapidity of the preparation, the clarity of the flavours. I keep putting too much of this or that and upsetting the balance of the dish. My knifework is lacking, and I had previously thought I was pretty good with a blade.

But I've enjoyed cooking lots of fish, including types I don't usually prepare - bonito and mackerel among others. I've gotten good at frying salmon skin to potato chip consistency.

A few weeks ago, I was in San Jose for work and found a little, inexpensive, and very authentic Japanese restaurant called " Hoshi". That was inspiring, the food was simple and delicious, and the chef talked to me about the methods and sauces.

So, I'm sort of half an inch into my first step. But it is fun. Does anyone have Japanese cooking tips or thoughts to share? Or is it kind of out of the mainstream here?
