Monte Cristo sandwiches

Baked chicken breast, potato salad and sauteed spinach. And I helped!

LOL Patti!!
I put masking tape on all my packages of meat and margarine containers of leftovers in the freezer. I hate it when the tape comes off. Is it me, or does masking tape not stick like it used to???

We are both craving more veggies, so a veggie stir-fry over rice is on the menu.

Pot roast sandwich, 3 bean salad, and raspberry Jello with pineapple and cottage cheese. I have been cleaning on my kitchen pantry and also looking for my microwave pressure cooker. Have not found it yet. I have not used it in years. Actually I have two of them and have not found either one. They are probably packed together in the same box. It is now 11 above and still falling. Temperature will probably fall pretty fast when the sun sets.

I had some homemade spaghetti sauce in the freezer. Cooked up some whole wheat spaghetti for it. Had a slice of homemade bread from the freezer too.

Angelaid, I've only had one Monte Cristo sandwich, but it was really good--like French toast with ham and cheese inside. We had syrup with ours. Is that how you do it?

Pam, LOL--you sound like a Hamburger Helper ad :0 And you dinner sounds delicious.

Jasdip, I use an indelible pen to write on the top of the package. It gets cut off after it's thawed. Guess I just thought I'd know what the heck it was in it. Never had any luck with "sticky" things. Always found them in the bottom of the freezer :-(

Sue, good luck with your search--our house is too smaLL to lose anything in. I sure love the sound of your Jell-o salad with cottage cheese. Yum!

That sounds really good, Shirley. Have you ever used spaghetti squash? It's really great--well, for my taste, anyway.

I use Deli containers (purchased very cheaply at the local bar supply). I TRY to remember to write on the lid with a sharpy, what's in it, and the date made. Sometimes I forget--have a couple of containers of mystery stuff (think it's ground beef and tomato sauce) at the moment, though. Anyway, since those containers are so cheap, I don't care about writing on the lids--they're still useable for refrigerated leftovers, even with stuff written on them.

Tonight? We had baked potatoes stuffed with bbq beef, grilled onions, cheddar cheese and topped with a dollop of sour cream. With a side of mixed veg.

LOL, Patti. That's happened to me more times than I care to admit. When DH asks what's for dinner the reply is Well, it's either spaghetti sauce or chili. I am very tired tonight. Not so much from the Book Club and Bridge but because Saturday night I couldn't get to sleep. It was 2:00a.m., then 3:00 a.m, then 4:00 a.m. then 5:00 a.m. I generally will just get up and read until I fall asleep but sometimes you lay there and keep thinking you're going to fall asleep any minute. It finally caught up to me this afternoon. I was so tired I just wanted to put my head down on the bridge table and go to sleep. (I did manage to come in second though) The good news is, the house is clean and I'm not cooking tonight. There's still some clam chowder and Marsala in the refrigerator and DH can help himself.

Just finished Smoked sausage sauted with onions and colored peppers. Betty Crocker and I fixed cheesey scalloped potatoes to go with it. Also green beans and a tossed salad on the side.

Patti, you could try what I have been threatening to do for years when labeling food to put in the freezer. Dh when asked for a dinner suggestion always says, "I don't care", or "whatever you want to fix" or "surprise me" . So if I lable containers with his exact words I can pull out "I don't care" or whatever he says for dinner that night. We will both be surprised!

We have been doing the meatless Mondays. Tonight is a barley, vegetable hot dish. I will like it, but barley is not one of my dh's favorites.

DH and I were going to do what we did last Monday night~~he would call in a take out order and I would pick it up after yoga. POOHIE there is no yoga tonight because of the holiday. Soo DH will just eat the leftovers from last night (dirty rice) and I am not sure aobut me. I did take myself out to lunch today, ate a big yummy burrito~~potato, beans and cheese;) If I had popcorn that would be good:)

I picked up some beautiful fresh Tilapia filets so I am making blackened filets and steamed fresh Brussels sprouts.

I had my first smoothie today for lunch, it was delicious and extremely filling, I haven't even thought about food.

Azzalea, I really like those deli containers. I just wash and save mine from our trips to Sam's.

Georgysmom, I'm so happy you made it through such a busy day. I wish all of you who are driven to serve our country, God bless you all!

Gazania, what a great idea. I especially like, "I don't care or something similar. Darned men!

I vacuumed and did 4 loads of laundry today. Our weather was beautiful 69 degrees with lots of sunshine.

Tonight I made Mexicali meat pie, which I haven't made in years. I forgot how good it was. We barely have half a pie left.

When I get something out of the freezer that I don't know what it is I call it a mystery meal. Sometimes I can guess what it is and sometimes I am surprised.

We had Rib eye steak grilled to perfection, with Baked potato and salad... Deelish..

We had poached chicken, mac and cheese and mixed vegetables.

Almond tart for dessert.

Many of these other dinners sound real tasty! Nice ideas for the rest of the week.

We took our Grandson out to the Red Robin and I got the Ensenada Chicken dinner. Dad got Clucks and Fries and DH got the Tavern burger! It was a fun meal.

For Monte Cristos, I make three pieces of thick french toast (with thick egg bread, sold as Texas Toast up here), pile one piece high with ham and swiss cheese, put the second piece on top of that, pile that piece high with turkey and swiss cheese, add the third slice of bread on top. Kind of mash down with a spatula and cook until the meat and cheese get hot. Sprinkle with powdered sugar and serve with strawberry jam. (DH doesn't 'do' the sugar and jam, to me, that's what makes the sandwich. Oh, and I just make mine with two slices of bread instead of three.)

Dreamgarden, that's why I like the "What's for dinner" thread--I get a lot of ideas for meals I wouldn't have thought of here.
