Can't find that bread recipe post!

It was just posted a day or two ago. I have gone back 10 pages and have done a couple of searches and still can't find it. It was banana oatmeal spice bread recipe. I was going to copy it but it was late and then forgot till today. Does anyone remember the post I am talking about?

could it be the Jungle Bread recipe from Ms Glenda?

here it is...

Jamaican Jungle Bread
1 1/2 cup flour, all-purpose

1 cup 3 minute brand quick oats

1/2 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup flaked coconut

1/2 cup walnuts or almonds or pecans, chopped (toasted)

3 bananas, mashed

8 oz crushed pineapple

1/4 cup vegetable oil

2 eggs

Mix flour, oats, sugar, baking powder, baking soda, cinnamon, salt, coconut and nuts in a large bowl. Mix bananas, pineapple, oil and eggs in a medium bowl. Add all to large bowl and stir, but not too much. Bake on a greased pan at 350 degrees for 50 minutes. For the glaze, mix 1/2 cup of confectioners sugar with 1 Tb of butter and add either 1/2 ts coconut or vanilla extract. Add 2 ts of milk. Pour this glaze over the bread. Makes one loaf.

I just got back from the store and bought the ingredients I didn't have for this. I can't wait to try it!

Its use is comparable to an open kettle canning, or filling the jars and capping, then flipping them over to seal. Worst yet. if it is used, it would usually require a pressure canning, and by that time its not a jello anymore. You must realize that many of those old 'hand-me-down' recipes, Amish, and how your grandma did things aren't valid today when it comes to canning saftey. I 'push the envelope' with a steam canner and a no heat vacuum process, but these are ONLY for items that are made with full strength 5% vinegar with no water added, and no other odd additives beyond pickling salt. If you were to look at a latest recipe from a Ball Blue Book, I seriously doubt it would mention using gelatin in any of the canning recipes. Quite frankly, I have only seen the mention of gelatin here in the Harvest Forum and have always posted a warning as its not a safe thing to do, even if used in high fruit acid jams. For Rhubarb, even though there is much less oxalic acid in the stems than the leaves, it can add to the complexity of the end product, and can affect its shelf life. Protien and bacteria seem to like each other.. Ever see the stuff they grow germs in? As an option a small amount of the Clear Jel starch will give a more consistant result as well as being much safer to can. You don't need to thicken to a paste, just a small amount is needed to give things a syrup consistency, or what you prefer, and adding lots would give you stiff rubbery jelly.

NANCY'S SPICY CHEESEBURGER SOUP 2 C cubed potatoes (peeling optional) 1ÃÂ½ C water 2 carrots, grated ÃÂ½ C chopped onion ÃÂ½ C chopped green pepper 1 jalapeno pepper, chopped 1 clove garlic, minced 1 tsp salt 1 Tbsp beef bouillion granuals ____ Combine the above in a large pan and cook until potatoes are tender. 1 lb lean ground beef ____Brown and drain ground beef and stir into cooked potatoes 2ÃÂ½ C milk 3 Tabsp flour ____Combine flour and milk and stir into soup. Bring to a boil then reduce heat. ÃÂ½ lb Velveeta Cheese, cubed ÃÂ½ tsp cayenne pepper ____Stir into soup, just until cheese is melted. bacon crumbles (optional) ____Top each serving with bacon if desired. this is one you'll either love or spit out -- it's strong Julia's Cranberry Chutney Source: Julia Child from Julia and Jacques Cooking at Home Tart and sweet with a touch of heat. Very good on leftover turkey sandwiches Yield 2 1/2 cups 1 large Granny Smith apple 1 lemon 1 cup orange juice 3 cups cranberries (12 oz) 3 tbsps white wine vinegar 1/2 cup sugar 1/4 teaspoon salt 1/4 teaspoon cayenne pepper (more to taste) Halve and core the apple and cut in small dice. Pare 10 or so thin strips with a zester, then trim the ends and cut the lemon lengthwise into quarters. Cut each quarter into thin triangles. Pour the oj and cranberries into a sturdy 2 or 3 quart saucepan and set over medium heat. Add the apple and lemon pieces, the strips of lemon peel, vinegar and seasonings. Stir together and cook covered about 5 minutes until all the cranberries have burst. Uncover, reduce heat and simmer for another 4 or 5 minutes, until thick. Taste and stir in small amounts more vinegar, sugar, salt or cayenne as you like. Cool to room temperature before serving. Keeps several weeks in refrigerator. Can be frozen.

Clare, here is the recipe I use to make a crisp. My son makes this recipe as well and all his neighbours in BC love it & him. He keeps the neighbourhood well supplied. Rhubarb Crisp Base & top: 2 cups flour 1 Â½ cups oatmeal 1 Â½ cups brown sugar 1 cup butter, melted 2 tsp cinnamon Filling: 2 cups sugar 6 tbsp corn starch 2 cups water 2 tsp vanilla Cook filling until thick & clear. Turn off stove & add 8 cups chopped rhubarb. Coat rhubarb until all covered with sauce. Press Â¾ of crumb mixture into 9x13 pan as a base, spoon filling in evenly, then cover with remaining crumbs. Bake at 350 for 30 minutes.

I made it this noon, after I came home from the store.

It is DELICIOUS!!!

However, I am wondering if there is a language problem about the size of the pan. Is there a difference (or accent! LOL) in the size or name of pans down south? There is no-way that all that is going to fit into ONE bread pan. I baked it in three good sized mini-loaves. It could have fit in two of my regular bread (loaf) pans.

That recipe is a real KEEPER!

I made the Jungle bread today but used a 9x13 pan. Worked fine. Still took about 40 minutes. It was very good.
