Seafood Sausage

I haven't made seafood sausage -- haven't even eaten it. But it seems like a good idea and it's been on my mind for a long time. I'm thinking crab, shrimp, lobster or fin fish would all be good ingredients. I was able to get hog casing at my supermarket, last time I tried.

Any suggestions or experiences to report on?
