I just realized I didn't post the Crab Louie recipe but I halved this one and changed lemon for lime as that's what's on our tree and added avocado and hard boiled egg on the plate and in the dressing as well as black, not green olives. The sauce was very rich but good, and if I make this again I need a source of fresh, lump crab which is not still inside the shell , because we don't get the right kind of crab here and it's a very messy job to find the meat LOL. CRAB LOUIE - epicurious yield: Makes 4 main-course servings active time: 20 minutes total time: 30 minutes For dressing * 1 cup mayonnaise * 1/4 cup ketchup-based chili sauce * 1/4 cup minced scallion * 2 tablespoons minced green olives * 2 teaspoons fresh lemon juice * 1 teaspoon Worcestershire sauce * 1 teaspoon bottled horseradish * Salt and pepper to taste * 1 1/2 lb jumbo lump crabmeat * Iceberg lettuce, shredded * Capers * Tomato wedges * Hard-boiled egg * Lemon Make dressing: Whisk together mayonnaise, chili sauce, scallion, green olives, lemon juice, Worcestershire sauce, bottled horseradish, and salt and pepper to taste. I have never consciously eaten a bug! Oh no! I do eat shrimp, crabs, and lobster; Wes tells me they are "bugs." No; in my mind they're not! They're "seafood!" I don't eat creepy crawlies! When I lived in Spain there was a little bodega in the ground floor of my apartment complex. They sold wine - offered from three huge (taller than me) wooden barrels - white, rose, and red. No bottles; no fancy names. You brought your own container, from 4 ozs. to five or more gallons, and they filled it for you. They also offered fresh garlic, onions, olive oils, olives, and gigantic lemons - and a huge half-barrel filled with live snails. Huge, live snails. There was a bead of salt along the top of the barrel to keep them inside. The lemons, oils, and garlic were all displayed in smaller half-barrels around the snail barrel. I just couldn't bring myself to try them. Depending on the day, they would sometimes bake fresh bread, too. That was it - three wines, garlic, olive oil, onions, olives, lemons, snails - and rustic bread on whim. It was a wonderful shop and had been in business for decades. I did eat a roasted sheep's eyeball and tongue. I also tried, and really liked, a tapas dish of tiny whole octopi cooked in their ink and garlic. Just to show you that i've done similar things. (See I tried to forget this one.) Two weeks ago, I decided to make pasta to go with our sautéed veggies and chicken. I pulled the pot out of the drawer, filled it with water, and put it on our electric cooktop. DH called me about five minutes later saying something is making a lot of noise. I go in, notice that it appears that water is all over the cooktop and wipe up what I can without burning myself. (Anyone want to wonder why I'm getting induction next time?) He says, "You must have gotten the bottom of the pot wet." I agreed. I finally put the pasta in, and continue to cook the pasta, except now DH and I keep smelling something that smells like burning rubber or something like that. And we keep hearing popping noises coming from the pot but can see no reason for it. Finally the pasta is done, I pick up the pot and underneath melted to the cooktop is green goo. It's also attached to the bottom of the pot. I still have no idea what it was that was attached to the bottom of the pot, but obviously it was filled with some sort of liquid that spurted out when the green thing burst. Luckily it did all come off the cooktop and the pot. Especially lucky since the condo goes on the market next month!
