Yeah, I heard that about refrigerating the dough before, in fact, I'm pretty sure it was here on the CF that I read that. But I'm not one to plan that far in advance. I mean, if I get in the mood to bake chocolate chip cookies, there's little chance I'll have the patience to wait 36 hours before actually baking them. Might have to try it sometime though.

That was wonderful! I just love baking science... I'm going to have to see if any of the information will translate to improving gluten-free cookies - my next baking frontier. My one criticism is how large he makes his cookies, but that's common because of the influence of commercial "fresh-baked" cookies sold seemingly everywhere these days, which are the size of a saucer. It wouldn't surprise me if you made smaller cookies than what the recipe suggests, it would alter the texture some. I like to get 20 small cookies to a baking sheet while his recipe makes 6-8 per baking sheet. -Grainlady

Thanks for replying Ricky. I really like mint though, I think I'm going to leave it out completely in half the cookies & put in only about an eighth teaspoon in the remainder & see how I like it, see how it goes.

I'd leave out the chocolate chips :-) But that's just me - not a big chocolate fan and I seriously reduce the amount of chips when I do make choc chip cookies. And I always use dried cranberries (craisins) when I bake except for cranberry orange bread so no need to freeze. But cranberry oatmeal cookies are wonderful!!

Yes, Ann T was kind enough to do a "test" for us, making the chocolate chip cookies and refrigerating some for a short period of time, refrigerating some for longer and baking some right away.

I'm one of those strange people who don't really like chocolate chip cookies, so I don't really remember the results, LOL, I think it made a difference but not a huge difference?

Maybe Ann T will weigh in here.

My favorite suggestion from that article is upping the salt in cc-cookies, which I've found makes a huge difference. I don't sprinkle on top -- instead I up the salt in my favorite recipe by about 50% and find that it makes them (frighteningly) addictive.

By golly, I am going to try this. I will even order the discs of chocolate. Thanks for the link trudymom. However...a 6" cookie! Can you imagine the Weight Watcher points in one of those babies?
