Low salt/ No salt websites for vegetarian

For a vegetarian who doesn't like most vegetables either..

Yes , it's my sister. She has had a host of medical problems all her life, bad heart, rheumatoid arthritis, and her heart started deteriorating last summer/fall/winter. Long story short it's been a nightmare of hosptilizations and her going looney almost, taking tons of meds daily. But she is now back in her nice little apartment on oxygen almost full time and she has now been put on a salt restricted diet because she was bloating up big time,, she's only 5'5" and about 90 lbs but she looked like a beach ball almost till they got all the water out.

Anyways.. can anyone point me to a good website of low or no salt vegetarian recipes.. She doesn't even eat a lot of vegetables, just cheese, milk, yogurts, eggs sometimes.

If you know of any good tasting low/no slat products available at Meijer or Kroger. I looked around the other day but didn't have a lot of time. Some of the "low salt" stuff like Campbells low salt tomato soup, really aren't all that low salt. They're just a little lower than their regular fare.

Peter, I'm glad your sister is at least back home in her own place.

Mayoclinic.com has an index of low sodium recipes for hypertension, but they don't sort it out into vegetarian, you'd have to do that yourself.

For some reason my computer won't let me put in a link, but it's mayoclinic.com or just google mayo clinic low sodium recipes.

Pond salt is perfectly good stuff, but not necessary for routine use. It is effective against a couple of kinds of parasites (but not most of them), and it is very useful for helping sick fish but it is not helpful or beneficial to use routinely. Also, if you ever DO need to use salt, you can save a lot of money and go to lowes and get the solar salt in 40 pound bags to use instead. Make sure you get the loose salt, not the pelletized salt as that kind contains harmful chemicals. the loose salt is fine though.

Thanks, that is very helpful. Mine is the same condition, I don't think it's likely to get salt water flooding where I'm planting it (which at this point is going to be on a mound, and staked to a fence for stability until it gets more established) unless there is a hurricane that hits really close by. From what I hear from neighbors, the last one that caused flooding in the neighborhood was Sandy - which was the most flooding here in 10 years! My neighbor tells me though that our 2 yards are the highest in the neighborhood and neither got much water, and oddly enough, the salt water came in the waterfront from the other yards, crawled up to the street side, then turned in to our 2 yards near the STREET at a lower part we each have. So weirdly enough, the place I was considering near the waterfront might in my yard actually be safer from salt than parts much further away near the street side. But, if water gets up that far in the yard, it will likely have a lot of freshwater rain in it so will not be so bad. It looks like the only time I will have to really worry about salt water covering the mound where I'm planting it will be in a major hurricane hitting very close by - which has only happened a few times in the last 100 years. If it does, I'm guessing I'll have bigger problems than if my mangoes are still alive anyway, at at that point bringing them in the house won't necessarily save them anyway. It's great to know that you grow Mallika specifically in higher-salinity soil, and it's happy (as are your other varieties)!

I think I collect it. My favorite is Maldon. I have it in small vessels and use it to top off salads etc.. I have Kosher by the stove..La Baleine close by.. Camargue because it's so available and looks pretty on my counter.. Garlic salts from Europe.... and seasoned salts..Crazy Jain's..etc... Seasoned/ hot crushed chili peppers from my favorite en vrac store.. And I use salt capsules made for pasta:) I have Red Hawaiian from TJ.s.... Pickling salt.. Smoked salts too..And ..I make my salted herbs..for soups and stews.. Oui..we.. like salt:)

-If you are under a doctor's care, I would check with them and possibly get with a nutritionists for some guidelines as well as all the great information shared here. -Do you have a sodium limit or is this a do-it-yourself project? The average American Diet often as much as 3,500 mg of sodium in it. There's a big difference in a low-sodium diet of 1,000 mg sodium per day and a restricted diet of 500 mg sodium, so you may want to understand the numbers to begin with. Our bodies need between 180 and 500 mg per day. It is an essential mineral and easy to get from whole fresh foods. Your drinking water may have as much as 30 mg of sodium per quart in it, as just one of those unexpected sources. -Make a trip to your local public library and check for low-sodium / low-salt cookbooks. -Choose recipes that have the nutritional information so you know how much sodium is in them, especially if you have to restrict your sodium to a specific amount. -Choose fresh and frozen whole foods over highly-processed prepared foods. -Put the salt shaker away. -If you normally use canned foods, like green beans, rather than buying the low-salt version (which I think you will find unpalatable in comparison), use something entirely different like frozen or fresh green beans instead. I can't contribute much regarding low salt vegetarian, but I've got some good sources of information listed on my low sodium cooking blog. You might find recipes there that could be adapted to be vegetarian. Also, I've listed sources for all kinds of low sodium products. And you might find some of my own postings helpful too.

It can be tricky trying to follow a low salt diet, and the more help & support you can get, the better.

I'm a vegetarian, but I love vegetables, so I don't know if I would be of much help. Nevertheless, I don't know if this will help, but sometimes a little lemon juice will work as a substitute for salt. It helps to brighten up the taste of things without the sodium.

I'm thinking that cheese is pretty high in sodium, at least some cheeses are, like parmesan for instance. As a cheese lover, it's hard to suggest this, but maybe she needs to find something else to eat, or look for low sodium cheeses - if they exist.

I don't envy your sister. My father loved all the food that was bad for him, and had a bad heart. He did his best to work with the foods that he was allowed to eat, and even got more interested in cooking, but I know he sorely missed the foods he loved. Of course, when he was sick, I think the restricted diet he was put on may have made him worse, as he was taken off fat other than olive oil, (the good fat) and margarine, which now they know is worse than all other fats.
