Here you go. I'm including the original recipe and my variations.
This is from the Southern Living 1984 Recipes cookbook.
Spinach Enchiladas 10 oz pkg frozen chopped spinach, thawed and pressed dry 1 (10 3/4) can cream of chicken soup, undiluted 1 (8 oz) carton sour cream 1 (4 oz) can chopped green chiles, drained 2 tbsp minced green onion 12 (4 1/2 inch) corn tortillas vegetable oil 4 cups (16 oz) shredded Monterey Jack cheese, divided 3/4 cup mince onion
Combine first five ingredients in container of an electric blender or food processor, and process until smooth. Set mixture aside.
Fry tortillas, one at a time, in 1/4 inch of hot oil about 5 seconds on each side or until softened. Drain tortillas well on paper towels.
Spoon 1 tablespoon each of cheese and onion on each tortilla: roll up and place in a lightly greased 12X8X2 inch baking dish. Spoon spinach mixture over tortillas. Sprinkle with remaining cheese. Bake, uncovered, at 325 for 30 minutes. Serve immediately. Yield: 6 servings.
Here are my variations. I think I followed the recipe the first time and it has evolved since then.
-Prepare 24-30 tortillas instead of 12 and bake in an extra pan. I don't bother to add extra cheese to the top to make up for what I put in the tortillas. It tastes good without it. -Olive oil instead of vegetable oil -I just cube the cheese instead of shredding it so I can get done faster. -We sometimes add baked or grilled chicken. It's a good way to use up leftovers. -My dh has his without the minced onion. It can be changed up depending on taste. -We put a little bit of the 5 ingredient mixture inside of each tortilla. -I sometimes use more minced onion in each tortilla. -We like ours a little crispier so we bake it 10-15 minutes longer.
