2 cans of Plums + Rhubarb = Cobbler?

Cleaned out the pantry & found a couple of large (30 oz.) cans of purple plums that need to be used up.

I want to make a plum rhubarb cobbler. I have several rhubarb plants but I've never used any of it...just think they're cool looking plants.

Anyway, I need to know how much rhubarb & how much sugar to use for a 9 x 13 pan sized cobbler. And how long to bake it to be sure the rhubarb gets done.

Oh & suggestions for any spices or extracts to use??

I would start with one can of plums and 3 cups of rhubarb cut into 1/2 inch slices.
Assuming the plums are un sweetened or in light syrup...mix 1/4 cup flour with 1 cup sugar....make that 2 cups if the plums are unsweetened.
Put the plums and the rhubarb into a 2 1/2 quart glass casserole...think that's a 9 by 13. Add 1 1/2 tsps vanilla and stir.
Mix the flour and sugar together with 1 tsp cinnamon....and stir into the fruit.
Then mix up your cobbler dough....
2 1/2 cups AP flour
1/2 cup sugar
4 tsps baking powder
Mix and cut in 1/2 stick of soft butter until well mixed
Beat an egg with
2/3 cup milk
1 tsp vanilla
And add to flour mix...mix until blended....don't over mix! and drop into globs ( cobbles!) on top of the fruit..
Bake at 375 until the fruit is bubbling and the cobbles are well browned....about 40 to 50 minutes.
Serve warm with cream.

I agree with LindaC, just one can of plums.
60 oz. would be an awful lot!

Barbara, My favourite apple crisp recipe is one that doesn't contain oats. This is a recipe that I have been making since I was a teenager. It is from an old flour company cookbook. You can easily adjust this recipe to use Rhubarb but you should also mix the fruit with 1/2 to 1 cup of white sugar, 1/4 cup of flour and season with a bit of cinnimon (optional), before adding the topping. Ann Home Cookin 4.9 Chapter: Recipes From Thibeault's Table Apple Crisp =========== Preheat oven to 375Â°F Grease a 1 1/2 quart square or round baking dish Cream together 1/3 cup butter 1 1/4 cups lightly packed brown sugar Stir in until crumbly a mixture of: 2/3 cups Flour 1/4 teaspoon cinnamon . Arrange in prepared casserole 6 peeled and sliced apples Sprinkle with crumbs. Bake in preheated oven for 40 minutes or until apples are tender and topping is golden brown. NOTE: I quite often double the topping and use a couple of extra apples.

Kaye, I was too lazy to re type so I copy and pasted from the other post! lol when I make my dump cakes I leave out the butter. Use a cake mix that has NO PUDDING in the mix. Duncan Hines is what I use. I've never made it with peaches, but I make it all the time with pineapple OR mixed fruit. I find that it always works out best by Mix the can of fruit into the cake mix. Pour in to a 9X13 pan and bake ... what ever the box says.. I bake 325 for about an hour. I would think that the smaller the peach bits, the better it would mixl up. I add a can of pineapple to the mix or a can of mixed fruit. I've tried low sugar cherry pie, but it works best when you mix the cake mix with a white soda, pour 3/4 of that into the cake pan, spoon the cherry pie mix over the top and then spoon the remaining cake mix over that and bake. You could use apple pie filling too... with spice cake, or cinnamon cake Pour some of the Costco 3 berry mix into a 9 X 13 cake pan. Add a 12 oz can of white pop to cake mix, stir and then pour over top of berries. Bake for an hour or so and makes a great cobbler >> . . . . I bet you could put the peaches on the bottom, then add clear soda to cake mix... (fresca works well) stir and pour over peaches, cook for about an hour or a little less. that sounds good!

Clare, here is the recipe I use to make a crisp. My son makes this recipe as well and all his neighbours in BC love it & him. He keeps the neighbourhood well supplied. Rhubarb Crisp Base & top: 2 cups flour 1 Â½ cups oatmeal 1 Â½ cups brown sugar 1 cup butter, melted 2 tsp cinnamon Filling: 2 cups sugar 6 tbsp corn starch 2 cups water 2 tsp vanilla Cook filling until thick & clear. Turn off stove & add 8 cups chopped rhubarb. Coat rhubarb until all covered with sauce. Press Â¾ of crumb mixture into 9x13 pan as a base, spoon filling in evenly, then cover with remaining crumbs. Bake at 350 for 30 minutes.

Thank you, Linda & Deanna! The cobbler is still on the 'to do' list; the plums are still sitting on the counter waiting... Anyway, I printed off your recipe & it's tucked underneath the cans of plums.

Been busy w/ the yard & garden & when I've have a spare moment to get on the 'puter, my son has been on it. (He's having major probs w/ his computer.) It's major planting time here in Wisconsin.

Lou--Maybe I'll stick some rhubarb in the freezer & take you up on that offer. Whatcha' doing next January?? :)

Now that I think of it, any secrets to freezing rhubarb??
