Sewing Leather - any tips?

I've got a vintage Viking sewing machine (a real workhorse) and have successfully sewed several faux-leather items using a heavy duty needle. But I want to try my hand at some minor alterations to a genuine leather item.

The leather is a light-to-mid weight, matte finish, with a tooled surface. The stitching itself should be relatively straight-forward -- just taking in a vest at the sides and possibly back (curved) seams. But where I'm unsure is 'pressing' the seams... I know that's key to a good end result, but have no idea how to do it with real leather.

Any of you seamstresses have any tips?
