Queso blanco?

I'm confused again - help!
I tried to buy queso fresco for my enchiladas, and was given queso blanco and was told it's the same thing. After I left the store I realized that the cheese that I had was the non-melting cheese that you fry or grill.
But Epicurious defines them as the same thing, too:
queso fresco
[KAY-soh FRAY-skoh]
A white, slightly salty, fresh Mexican cheese with a texture similar to that of FARMER CHEESE. Queso fresco is available in cottage cheese-style tubs in Latin markets and many supermarkets. Also called queso blanco .
A non-melting cheese doesn't seem to be the right thing to put in enchiladas, does it? Regardless, now that I have a hunk of queso blanco, does anyone have any good recipes for frying or grilling it?
