Alexa,

I have no idea why I thought of you when I saw this recipe, but I did. Heck I don't even know if you like raw oysters but for some reason your name immediately popped into my head.

The recipe is from the current issue of Food and Drink, a mag produced by our Provincial Liquor Control Board.

Oyster Shooters (makes 8 shooters)

8 meaty Oysters

1/4 cup dry vermouth

1/4 cup sherry

2 TBSP minced shallots

1 TBSP white wine vinegar

1 tsp lemon zest

1 TBSP lemon juice

! TBSP cold butter

1 TBSP chopped parley

2 TBSP creme fraiche

2 TBSP caviar

Shuck oysters and transfer meat to individual martini glasses reserving all liguid.

In a small saucepan combine oyster juice, vermouth, sherry, shallots, vinegar, lemon zest and lemon juice.

Simmer until reduced by half, approx 5 mins.

Whisk in butter just until incorporated and sauce has thickened slightly.

Stir in parsley and spoon mixture over each oyster.

Top with creme fraiche and caviar.
