AAARGH;I lost a link to a recipe

I copied a "Roasted Root Vegetables" recipe from a blog, or from a link to a blog from one of the crafting groups I belong to. I can't for the life of me remember where it was and I can't spend any more time searching.

I did copy the recipe, and saved it in my iPod's notepad, but I want to let the creator know how much I'm going to love it.

She made it serve at a large Christmas dinner. I was going to half the recipe, but then I thought I'd better roast all the vegs at once and freeze the excess.

The recipe...

Preheat oven to 450

1 butternut squash
1 rutabaga
1 large sweet potato
3 carrots
3 parsnips
3 turnips

Peel and chop all the vegs into 1-inch pieces

Toss with 1/4 cup of olive oil and sprinkle with salt and pepper to taste

Roast in a large, deep roasting pan until the vegs are lightly browned and the edges are tender, about 45 minutes.

I added a couple of pressed garlic cloves and a pinch of rosemary leaves to the olive oil. I let it sit in a warm spot to infuse while I chopped all the vegs.

Dinner is going to be yummy tonight, and since he turns up his nose to vegetables...there will be more for me!
