Chinese Mustard Recipe Please

I'm in search of your best chinese mustard recipe - the hotter, the better! Well, not so hot that I can't taste but I love the "zip" when you bite into an egg roll with spicy mustard. I haven't found one that I like yet or tastes like what I get when I eat in my favorite Asian Rest.

I like making my own mustards and here is one to share that we really like:

German Mustard (Source I am not sure of. I found on the internet sometime back in 2001).

1/3 cup whole mustard seed

1/3 cup dry mustard

2/3 cup water/divided

1 cup cider vinegar

2 TBS. brown sugar

1 1/2 tsp. salt

1 tsp. onion powder

1/2 tsp. garlic powder

1 TBS. flour

1/4 tsp. ground cinnamon

1/4 tsp. ground allspice

1/8 tsp. ground cloves

3 TBS. corn syrup

In small bowl combine mustard seed and a 1/3 cup of boiling water. In another bowl mix dry mustard with 1/3 cup warm water. Set both aside for about 10 minutes.

In saucepan combine remaining ingredients. Bring to a boiil and simmer, covered for 5 mins.

Place vinegar mixture and mustard mixtures in a blender and blend at high speed, scraping down sides occasionally, until mustard seed is crushed.

Pour into container with tight fitting lid and refrigerate.

MY NOTE: Spicy and nice. A real keeper. Great on sandwiches and pork.
