dh is in class till 10:30pm and i'm on my own. my stand-by dinner is always Vodka Pasta Sauce from CookingLight (it's low fat!) & VERY DELICIOUS. from start to end of clean-up is 45min (very important to me lol) and only makes 2 dirty pans. can u tell time is a priority at my house lol?! we have leftovers from sunday's beef burgundy (martha stewart full fat recipe Yummy) & a ham soup from mon but DH usually takes those for lunches to school. ~ liz

this is not a good night for us. so it's fast food...dgd is playing indoor soccer, lol..

but tomorrow with temps in the single digits, it will be a lovely chunk of round steak, in the crock pot with a can of tomato soup, onion, and veggies...(i'm using fresh this time but i love the soup and lipton onion soup mix the best)

I'm gonna try to pare this down to a serving for one or two:

Chicken Paprikash

3 cups whole mushrooms, cleaned
1 onion, sliced
2 cloves garlic, minced
2 tbsp Olive Oil
3 lbs skinless chicken thighs, seasoned with salt and pepper
1 cup Chicken Broth
3 tbsp all-purpose flour
4 tsp paprika
1 cup sour cream

Place mushrooms, onion and garlic in a slow cooker. Heat the oil in a pan set over medium-high heat and sear the chicken. Transfer the chicken to the slow cooker. Combine the broth, flour and paprika in a bowl and then pour into the hot pan. Scrape up any browned bits from the bottom of the pan and then pour the mixture over the chicken in the slow cooker.

Cover and cook on low for 5 hours or until chicken is very tender. Remove the chicken from the slow cooker and keep warm. Pour the remaining broth into a medium saucepan set over medium heat and simmer until the sauce is slightly thickened. Remove the mixture from the heat and whisk in the sour cream. Serve chicken and sauce over hot egg noodles.

Sour Cream Onion Steak in the crock pot now cooking. I don't have the foggiest what else. Wonder if I should take out some frozen rolls and bake them and a baked potato?
That should help heat the house! LOL

DH is scheduled for his colonposcopy tomorrow, so he's on a liquid diet. He's having chicken broth and jello. I can have just about anything I want. I'll let you know. . .

I'm cooking (as usual, good thing I love to), and it will probably be chicken fried steak, hash browns and some sort of veggie sidedish.

I'm cooking a roast and will probably do mashed potatoes and gravy with green beans.

I went out for a big, great breakfast early this morning. So I imagine I won't have much of a meal today. Probably just snack...

Stove Top meatloaf muffins, baked potato, some kind of vegetable.

Plain navy bean soup. Nothing in the pot but beans and the water to cook them in. DH grew up on beans and his Mom rarely had any thing else to add. The meal was just beans with salt and pepper and his Mum's wonderful homemade buns. Every now and then that is what he requests. Sure wish I could duplicate those buns for him. I will have salad too. Only times salad was included in his childhood was when there was a garden to pick it from.

I cooked up a pot of black bean soup last night so I will have some of that and a side of arugula and pasta salad.

Beaners and weiners for dinner this evening and maybe some french fries.
I am also tired of fixing and eating the same meals.

I'm alone tonight so I'm having pulled pork sandwich(s) with homemade Cairo style bbq sauce.

Leftovers! Left over chicken breast (bone-in). Left over pasta w/left over Buitoni Herb parmesan tomato sauce w/Romano cheese topping. Green salad. Bread rolls. Red wine. All things my good little Irish-Italian boy loves. (Funny, he hates most Irish cuisine. Is "Irish cuisine" a non-sequitor? LOL)

Stuffed peppers tonight.. and boy were they good! We had fried potatoes too that were leftover from last night.

Nothing. We went out for lunch (Olive Garden) for the soup, salad and breadsticks. Used our last OG gift card from DD. I absolutely pigged out on breadsticks and salad, so I couldn't even finish my chicken gnocchi soup. Brought it home for DH to have for supper, 'cause I'm STILL full of bread!! It was delicous but I felt like I'd just had Thanksgiving.

I decided on meatloaf, and made a loaf of french bread...add a veggie and that will be ours!

Spaghetti and garlic bread

I've got two bone-in chicken breasts simmering in a pot of pasta sauce right now. And am about to put on a pot of whole grain macaroni to go with it. I'll have to thicken the sauce with a bit of butter/flour mixture, but it should be ok. Never done this before so I don't know how it's going to turn out.

Tonight had my guys favorite tacos and refried beans. Must say they were really good and filling. DH cleaned up the kitchen afterwards.
