I love them all...but I will say that I made the White Chocolate Fudge for the first time this past week...and I love that one the most..the white chocolate makes it like velvet. I used 8 oz of Ghiradelli White chips. I even "screwed" it up..LOL I forgot the cream and had the butter and sugars going at it and it went to temp like zip..but then I was like.."what's wrong with this?"..LOL oh DOH cream..so poured it in and put it back on the heat and brought it up to proper temp.. Then stirred in chips and vanilla..arm falling off after cool down...but got it done.. I sold it at a bake sale and people were SHOCKED when I said it was "old fashioned" marshmallow fluffless fudge.

NancyLouise, don't give up on making a real old fashion homemade fudge. It really isn't difficult. All the ingredients except the vanilla go into the pot at the beginning and are cooked until they reach the softball stage. Removed from the heat and allowed to sit for 10 minutes before adding whatever quality chocolate you are adding (or not if you are making maple walnut) add the vanilla and beat with a wooden spoon just until it starts to thicken. Then poured into a buttered dish and allowed to cool. Perfect fudge every time. Smooth and creamy. If your fudge is sugary or grainy rather than creamy it is because it was overcooked past the softball stage. Fudge really is something where practice really does make perfect. I made six batches last week for Valentines Gifts. I made two batches at a time, each in their own pot, staggering the time so that as one was almost at the softball stage the other was just starting to cook.

Bean...I guess I should have made it clearer, yes that it was Epiphany day which here in Spain is like Christmas Day as far as gift giving. The children wake up to find their gifts, brought by the Three Kings during the night. So the day is one of family reunions, dressing up and holiday dining in or out. Annie I would love a taste of those baked beans! I can just imagine how good they were. I must also see if I can incorporate more of them into our diet, if I'm allowed, as I could live on beans and lentils quite happily. Wolf also says he'd like less meat and more fish and lentils. Today I harvested some of my basil, but only cutting off the tops and using it together half and half with some I purchased and made a really good pesto. We had it with whole wheat spaghetti and a salad of dark ruby lettuce, tomatoes, peppers and red onion. It was a favourite combination. Took photos of both dishes....then I went brain dead and accidentally wiped out instead of downloading the pics of the spaghetti. Darn...it looked so nice too! But the pesto recipe I took from TV is a winner, so here is a photo I made another time when I made it over wide noodles, along with today's salad platter. Rainy and cold here today. Only went outdoors long enough to feed the birds and our ferral cat. Pesto - from Italian TV Cook Program 4 cloves garlic, minced 2 cups basil leaves 1/2 cup olive oil 1/2 teasp salt 1/2 teasp f.g. pepper 1/2 cup parmesan grated 1/2 cup pine nuts teasp water Process all except oil in food processor, drizzling in oil slowly last. OK, this is Connie K. from Des Moines, Iowa, and appears my info is going through... I typed up the Baker's Chocolate Creamy Fudge recipe over 40 yrs. ago. Makes 36. i forgot to type the evaporated milk, but i think it was 2/3 c. evap. milk (on a notation of mine). Here's what i have: 1 pkg (8 squares) Baker's Semi-Sweet Chocolate, 2/3? c. evaporated milk, 1 1/2 c. granulated sugar, 2/3 c. marshmellow topping, 1/2 c. nuts (i use walnuts or pecans), 1/4 c butter, 1/4 tsp. real vanilla (i tend to add more, apx 1 tsp.) Cut ea. choc. square into 4 pieces. Combine sugar, evap. milk in saucepan. Stir over med. heat until mixture comes to a full rolling boil. Boil 5 minutes over a Low Heat, stirring constantly. in separate container, add remaining ingredients incl. chocolate. Carefully add boiling sugar syrup mixture; stir until choc. melts and mixture is smooth. Pour into a greased 8" pan. Chill; cut into squares. Makes 36 squares. good luck. im 90% sure of amt. of milk.
