3/4 gas ball valve

I have run 3/4 HDPE piping to my outdoor kitchen. The riser from the ground is of course 3/4 inch as well as the pipe.

I bought a 3/4 brass gas shut off valve and I notice that the hole in the valve is only about 5/8 inches in diameter.

Now why is the hold not 3/4 inch since I am using 3/4 pipe? Will that not cut down on the amount of gas that goes to the 3/4 inch piping?

Will I have to maybe use a 1 inch shut off valve in order to get a bigger hole?

Explain to me please how this works. Will that cut down on the amount of gas going from my 3/4 black iron pipe to the 3/4 inch polyethylene yellow gas line?
