Challah Bread in Bread Machine

Does anyone make Challah bread in their bread machine, including baking not just the dough cycle? If so, I'm looking for a good recipe for an 1 1/2 to 2 lb loaf. TIA Mare

Hi Mare,
I checked my manual that came with mine, as well as online.
The AllRecipes Challah got 5 stars from several reviewers, if that's any consolation.

Here is the recipe for 1.5 loaf.
Bread Machine Challah

"Challah, a yeast egg bread, is made especially easy with the bread machine."

INGREDIENTS:
3/4 cup milk
2 eggs
3 tablespoons margarine
3 cups bread flour
1/4 cup white sugar
1 1/2 teaspoons salt
1 1/2 teaspoons active dry yeast

DIRECTIONS:
1. Add ingredients to the pan of the bread machine in the order suggested by the manufacturer.
2. Select Basic Bread and Light Crust settings.

Here is my Black and Decker Recipe from the manual.
This is exactly like my white bread recipe only with eggs. It makes a 2 lb loaf.

2 eggs, room temperature
1 1/3 cup milk
2 tbsp oil
2 1/2 tbsp sugar
2 tsp salt
4 cups bread flour
2 1/4 tsp yeast

Thanks J, have you tried either recipe? A few days ago my brother and I were talking about our childhood , when our parents would get "Holly" bread from a woman in the neighborhood who sold the braided bread, it was so good. I've never tasted bread that good since. I've been hungry for it ever since. Not much of a baker, but do have a bread machine. Hoping to come close to the bread I remember from way back when.

I made a double batch because there was enough tangzhong to do so and because I wanted to test how the bread 'kept'. Also, I cut back on the amt. of sugar when I made the bread. The tangzhong definitely helps in keeping the bread fresh longer. Mine is still relatively soft over 24 hrs. after baking which impresses me enough to try adapting this technique to some of my other bread recipes. My loaves had a very nice crispy crust fresh out of the oven. Note that I'm baking in a toaster oven and the top of the loaves were very close to the top of the oven. Maybe it's just me (or the flour I used--Pillsbury Bread flour, but I thought the bread was lacking a bit in flavor. OR, since the recipe doesn't call for any salt & I didn't add any, perhaps that's part of the problem...salt helps to rein in the action of yeast and I noticed that the dough was really spunky and rose quite fast. No doubt, retarding the rise would help a lot to develop flavor. Nice crumb but the bread has a little different 'mouth feel'. Kinda' weird but not necessarily disagreeable. Agree that it would make great rolls which is what I'll likely do with the recipe next time, along w/ a bit of salt & at least an overnight ferment in the refrigerator to help develop more flavor. All in all, the recipe is worth trying. Thank you for sharing it with us, Pat.

Hot Cross Buns and Greek Easter Bread come to mind, and Greek Easter Bread is a basic enriched Danish dough with anise flavoring or aniseed, and formed in a braid in a circle. #1. Find out how much the flour capacity is for your bread machine before using a non-bread machine recipe. For instance, my Zojirushi bread machines (V-20 and X-20) have a 5-cup capacity if I'm going to bake in it. The old Zojirushi S-15 had a 4-cup capacity. If I'm only use it to mix/knead the dough, I can use a larger amount of flour for a recipe - BUT - I take the dough out of the bread machine as soon as kneading is complete and proof it in a dough-rising bucket - NOT the bread machine. 2. As chas045 pointed out, check your dough. Check the condition of the dough during the first 5 minutes of kneading and adjust it for hydration at that time by adding more flour or adding more liquid - whatever is necessary - if the dough doesn't form a soft tacky ball. The amount of flour necessary for any bread recipe is just a good (or bad) guess. If the recipe called for high-gluten bread flour, and you used all-purpose flour, it would take more all-purpose flour (or less liquid) because of the lower gluten (protein) content in all-purpose flour. Gluten soaks hydration like a sponge, so you have to adjust to those differences if you switch from one flour type to another. 3. Do a search on-line for a bread machine recipe for "Easter bread" and try to locate one that is similar to what you are wanting to make and one that will work in your bread machine. The yogurt shouldn't be a problem reacting with yeast. Yeast actually works best in a mildly acidic environment, which is why ascorbic acid is often mixed with dry yeast products. To improve the rise of breads containing wheat germ and whole wheat flour (which contains wheat germ), I always add an acid ingredient to counteract the gluten-damaging effects of glutathione in the wheat germ. Bacteria (in yogurt and also present in bread dough made without yogurt) produces those tasty acids in bread dough that improve the flavors of bread when we refrigerate it. The acidity already present in sourdough starters help sourdough breads keep longer, inhibit mold growth and also slows staling, and you'll see the same qualities in breads made with yogurt. -Grainlady

OK, so if I wanted to make it without using a bread machine (I don't have one). Tell me if this sounds right. Mix dry ingredients. Pour in yeast and water. Knead for 5 minutes in stand mixer. Put in greased bowl. Let it rise until doubled in size. Punch it down and shape it into a loaf pan. Let it rise until it's crowing over the top of the pan? I have some rye sitting in the freezer that I used for a sourdough starter so I guess I could grind a 1/2 cup of that for rye flour.

Sorry I haven't. I do make the regular white using the same ingredients as posted on my second recipe. Except I use butter instead of the oil. It's delicious. Like you, I use my breadmaker from start to finish.

People were raving about the Challah loaf on the All Recipes site (the first recipe). Some were saying it's authentic tasting.

I just made a loaf of white, think I'll try the challah recipe tomorrow!

Hi Mare.
DH is eating the Challah bread now. I used the All Recipes one, except I used 3 tbsp unsalted butter for the margarine. I also only used 1 tsp salt.

Very light and tasty. He said not to lose the recipe! LOL

Are you still able to braid the bread.

I love Challah bread, but haven't made any myself in a long time.

I better go check the dates on the yeast!

I made it from start to finish, in the machine. The site that I got the recipe from had many, many people say they used the dough program, and then took it out and braided it.
