What to serve with party sub???

I'm looking for ideas for a party for crowd of 100 adults/kids. I'd like to get a couple of the 6' subs...maybe ham or turkey...for the main feast. It's a potluck. I need suggestions for appetizers/side dishes. What would you serve?

Potluck? Is everyone else bringing the sides? Or will you have more main dishes?

I think that for a crowd, things like potato salad, coleslaw, fruit salads, all can be made in quantity very easily.

Healthy sides -- whole fresh fruit, carrot sticks, celery sticks, baked chips, pickles, pasta salad loaded with chopped veggies, fruit salad

Carbs -- chips, pretzels,

The usual -- Cole Slaw, mac salad, potato salad

A few times each growing season I used to do a pepper-thing for my non-chilehead friends. I would usually serve this while waiting for a pot of shrimp or crabs to boil. I would roast some garlic, put them in small bowls. Then, I added some good extra virgin olive oil into each bowl. I would then put a different variety of sliced peppers in each bowl with the garlic and oil. I warmed the bowls in the oven till the peppers get just a LITTLE BIT tender. Most of my friends are not too crazy about really hot peppers so, I did this with the tamer ones. I know the olive oil and garlic detract from the pure pepper flavor but, they loved to sample all of them. Very rarely was there any left over. Especially if we served them with small skinny loaves of hot homemade French-bread to be smeared with the garlic and dipped in the garlic/pepper oil. Sometimes I would use fresh-yanked roasted shallots instead of garlic.

My first thought when I hear "steamer" is some kind of Chinese dumpling as well! Probably because that's what I use mine for mostly! A good "cheat" for them is to just cook up some ground beef or turkey (I don't eat pork, but the traditional methods use ground pork) flavored with minced garlic & ginger, some sliced scallions and chopped water chestnuts, some soy sauce, sesame oil, maybe a touch of five spice powder - whatever flavors you like - then get a package of those refrigerator biscuits. The regular one's not the huge "grand" ones. Flatten out the biscuit, put a tablespoon or so of your mixture in the middle then bring up all the sides around and pinch it at the top to kind of seal the dough, then steam them. They're more filling than using a traditional dim sum wrapper, but not everyone has access to those. I think the biscuits are a "cheat" that works very well. Have fun at your party! Lisa

Thanks everyone! Joyful, my daughter will have a Bachelors in Recreation Management.. she had her internship at the zoo in Omaha and already has been offered (and accepted) a job there. The party will be on a Sunday and our family has always had a large meal around 2:00 on Sunday parties. I may rethink the time to serve the main meal though.. maybe change it to 4:00 or 4:30. We are not having a open house, but I know we'll have the usual late stragglers. I hadn't planned on having appetizers, but may add some now. It'll have to be ready made stuff cause I will be out of town the day before the party for DD's graduation. Trying to make this easy on myself. :) I do plan on hiring someone to tend to the kitchen while I socialize with the guests. There will be plenty of food. Probably 4 different pasta selections and 3 or 4 different salads plus breadsticks.. olives, pickles.. that sort of thing. Once the food is set up we will continue to replenish it.. it's not that I thought we would run out of food, I just know hot pasta and bread tastes better when it is first brought out. Beer. Yes! I'll also have plenty of coffee, bottled water, tea and sodas. Desserts will include a large cake and hot from the oven cookies. Any more suggestions are welcome.

Copious amounts of booze to make them forget food! Throw a few tri-tips on the barbie then slice it thin. It's like serving steaks without the need for 20 steak knives and a seat at a table. Another thing that works pretty well is to go to Wing Stop and get one of their bulk hot wing platters. All this helps to avoid the sit down all at one time for eating and people will forage over the dinner period. Makes for smaller plates filled with a course at a time and everyone seems to find a spot to sit. Believe me you don't want to spend the time placing tables for twenty people to sit. Over the years we've had many of pool parties and it helps to have folks bring a side or dessert. You know the whole thing about "what can I bring." We've found that people actually feel more comfortable when they bring something. I know this seems strange but they also seem to help with the layout and cleanup when they're making sure you try their green beans with funions and pickled kippers casserole all the while keeping tabs on their prize tupperware. Fish breath is a small price to pay for the help and a single cocktail will make it as if it never existed. I know we don't subscribe to the Martha Stuart book of party planning but if you don't want to spend a whole lot of time cleaning up and prepping so you can focus on the fun take em up on the "what can I bring." Partygoer:What can we bring? You:Well we have some hot dogs but we're a little short on chateau briand, filet mignon, and caviar. Partygoer:Maybe we can bring some potato salad. You:Wow that will be perfect!!! It will go so well with the hot dogs.

Salads for sure. And cut up veggies with dip are never a wrong choice!

Sorry, I didn't explain that. I'm in charge of providing the sub and drinks. It is the main dish. Everyone else will be bringing the sides.

Don't forget the condiments... mayo, mustards, pickles, etc.

To me potluck means the ones who bring the sides get to choose what dish to bring. You can suggest categories but leave the actual item to them. Just let the other guests know what you're providing and let them decide.

This 'potluck' is for a group function. The tradition is that the group funds are used to pay for the main food of the meal whether it be beef, pork, sandwiches or whatever. Group members are assigned to bring certain sides like hot or cold. There is individual choice within each assigned type of food.

When we had potluck as a group function, the signup sheet was sectioned into food types. Like meat dishes, salads, sandwiches,desserts, and one for drinks/chips combined.
Then the individual person would put their name in the section as to what they were bringing.

So I think, what you are asking is, that you want to suggest what to bring in those groups????? and then let the individual signup for it??????
