Doughnut Muffins

These are great for breakfast or morning coffee. We do treats after service and tomorrow is my turn -- I made these muffins for tomorrow's fellowship. Somehow, it seems more healthy when it's a muffin!

DOUGHNUT MUFFINS

12 T. butter at room temperature
1 c. sugar
2 large eggs
3 c. flour
1/2 T. plus 1 t. baking powder
1/4 t. baking soda
3/4 t. salt
1/2 t. ground nutmeg
1/2 cup plus 1/3 c. milk
1/8 c. buttermilk

For dipping:

8 T. unsalted butter, melted (use more if needed)
1 c. sugar
1 T. ground cinnamon

Preheat the oven to 350. Cream the butter and sugar. Beat in the eggs, one at a time, until just mixed in. Sift together the flour, baking powder, baking soda, salt and nutmeg. Combine the milk and buttermilk. Mix a quarter of the dry ingredients into the butter mixture. Then mix in a third of the milk mixture. Continue mixing in the remaining dry and wet ingredients alternately, ending with the dry. Mix until well combined and smooth, but don't overmix. Grease and flour a standard-size muffin tin (or use paper liners -- but you have to take them off before you dip them). Scoop enough batter into each tin so that the top of the batter is even with the rim of the cup. Bake the muffins until firm to the touch, 30 to 35 minutes.

To finish:

Melt the butter for the dipping mixture. Combine he sugar and cinnamon. When the muffins are just cool enough to handle, remove them from the tin, dip them all over with the melted butter, and then roll them in the cinnamon sugar.

Yum, those look delicious. They're reminiscent of a recipe that was a huge hit here a few years ago from Sol. She called them "Dirt Bombs" and they had cardamom. I went and bought cardamom on purpose to make them and they were so worth it but looking at your recipe I'm betting I could have just left it out. Ashley told me they tasted a bit like chai....

Dirt Bombs
Yields: 12 muffins*

3 cups AP flour, minus 3 tablespoons
1 tablespoon baking powder
ý teaspoon salt
ý teaspoon ground nutmeg
ü teaspoon ground cardamon
þ cup (1 ý sticks) unsalted butter
1 cup granulated sugar
2 large eggs
1 cup whole milk **

Topping ***

þ cups unsalted butter, melted
ý cup granulated sugar
1 ý teaspoons ground cinnamon

Preheat oven to 400ú F. Place the rack in the center position. Generously grease a 12-cup standard muffin pan.

Sift the flour, baking powder, salt, nutmeg and cardamon into a mixing bowl. In another bowl, cream the butter and sugar until light and fluffy. Scrape the bowl down half way through. Mix in the eggs. Add the dry ingredients alternately with the milk in two additions, mixing gently by hand to incorporate all the flour. The batter will be on the stiff side, but airy. DonâÂÂt over mix or beat the batter as this will make the muffins tough. Spoon the batter into the prepared pan, without smoothing the tops. Bake for about 25 minutes or until a cake tester inserted in the center comes out clean. As soon as the muffins are cool enough to handle, turn them out onto a wire rack.

Add the melted butter to a bowl. In another bowl, mix the sugar and cinnamon.
Dip the muffins (top, sides and bottom) in the butter, using a pastry brush -if necessary- to cover areas not buttered by dipping. Immediately roll the muffins in the cinnamon sugar mixture. Serve warm or at room temperature.

*I've made this twice, and both times, this recipe has yielded 16 muffins instead of 12.
**I substituted whole buttermilk for whole milk because I always have it on hand and prefer it for baking.
*** The amounts listed for the sugar and cinnamon are not quite enough to coat all the muffins, so I recommend you double it.

Oh Annie! Sol's Dirt Bombs were the first thing I thought of when I opened this post. I think I need to make a batch... I *love* cardamom!

But the donut muffins sound good to....maybe a taste test is in order. Swim season is coming, I bet the kids on the team would appreciate this one morning as a surprise.

Thank you both!

Turn frozen fruit into sorbet (bananas taste like ice cream). Most will require a little sweetening, but pineapple canned in its own juice (freeze and then cut into chunks) pleases most people without any extra. Make just about anything into spreads, dips, mousses, patees, salsas, chutneys, etc. You can chop up or puree fruit, vegetables, canned or cooked beans, cheese, fish and meats for these. Doing this is particularly useful for frozen stuff where the texture isn't as good as fresh. For example, instead of letting extra cheese dry up or go moldy, I freeze it and then turn it into cheese sauces or spreads. Even cream cheese, which falls apart when frozen. Shred and chop vegetables. Admittedly, if you want consistent large pieces it's best to do them by hand, but not everything needs that. For example, homemade cole slaw is a breeze. (A tip for more-even small pieces is shred them first and then chop briefly.) With practice it is possible to produce attractive vegetable slices, but not all the slices will be acceptable, so I use the processor only for big slicing jobs. As noted above, you can chop up your own meat -- important for chili where the meat should be coarser than ground. And fish for gefilte fish or quenelles, or even tuna loaf. Or use it to shred large amount of cheese (I'd rather use a hand grater for a small amount than clean the processor). I bake low-carb and grain-free so I'm always grinding nuts (even the pre-ground ones can stand being made finer) as well as other ingredients. When I use canned fish (for savory breads) I puree the bones for more calcium. (Or for coarser things like salmon loaf, put the bones in first to puree them while leaving the flesh chunky.) For grain-based baking, it makes dough-making a breeze for even the heaviest or slackest doughs. And turn your stale bread into breadcrumbs. What doesn't a food processor do well? Large amounts of liquid -- use a blender for that. Perfect cubes of any size. A high yield of perfect slices. And small jobs, like chopping up a few herbs or handful of vegetables, are best left to the mini-processors.

Well that's great, Al! I'm kind of a gym head and normally if I get tempted my response is "two words: washboard abs." But, like you, I like to bake, and as you say, it's good to have a cheat day or a treat. My gym manager and I are Facebook friends, and last night we were having a discussion about the virtues of frosting, LOL. We're both content with the frosting, any cake being optional, but in the case of your goodies here, I'll exercise the option. :-)

Thanks for the comments! Annie, they are really good! They taste like cake donuts, but lighter in texture...not quite as dense. I ate one without the sugar coating and one with. I liked them both. The kids have all eaten them now and say they'd prefer them without the sugar coating. They loved the flavor and the texture. So, it looks like these will go into our muffin rotation, but next time, I'll pass on the coating.

Dirt Bombs! That's what I bought the cardamom for. Thanks for the reminder.

Yes, my daughter would be happier if I fed my grandbabies muffins instead of doughnuts.

Love the doughnut muffin! My recipe, from old-time Mainer Marjorie Standish, looks very similar.

Those muffins look pretty darn good. I'm not a breakfast person, but I'd be willing to change.

Thanks Anniebanani!

Guys, I haven't made Dirt Bombs in, like, forever. But I'm heading over to the airport to pick up 4' 7 F of attitude (Mom), so we might be end up baking together.

I'll have to keep her busy, or she's likely to do something horrible, like the 'white glove test.' Or, tell me to stand up straight.
Oh, my body's rigid with terror.

LOL, Sol, she kind of reminds me of my own Mother, 4'9" and a force to be reckoned with.

elery has lost 65 pounds since Christmas or I'd make some dirt bombs right now. Maybe I'll make some for Maddie, I'll be with her Thursday and Friday.

Yes, Cathy, he and I both managed to put on some weight. I put on about 15 pounds he put on a LOT more than that. I think it was sitting every night with a couple of glasses of wine and cheese "for Cooper".

Yeah, Cooper got fatter too, the vet isn't impressed, LOL, but Cooper's happy! Blue Cross insurance isn't though, if your BMI is over a certain number, they make you pay more, so it's got to come off.

Dang, now I want muffins and not healthy ones either!
