Food Saver has NEVER advised anyone to use that system to make any home canning safe. To make home canning safe, a high acid is needed, as well as processing times for foods that contain lower acid, which would need a pressure canning. Because I have been canning a very delicate thin skinnned pepperoncini, and using a special vacuum system to remove all the air from these peppers, and also force in all vinegar and salt brine, then fill canning jars with these peppers that have been exposed to the special vacuum (NOT A Food Saver vacuum) my process involves no heat of any kind, but instead, a high acid, and a high amount of vacuum with no chance of any air that would be trapped in the jars. My peppers are safe, and have no chance of being contaminated by any bacterial botulism or any other kind of spoilage. The ONLY think I used the vacuum process for is a specific pepper type, with no added water, only full strength 5% vinegar and pickling salt as the brine.

As woohooman mentioned above, fermenting your own, making your own mash, is the way to go. That link is pretty good - although once you understand the basics, then its an art form. Essentially, its the same thing as making sauerkraut - the fermentation eats up the sugars in the peppers / fruit, etc, creating lactic acid, which in turn preserves it, eliminating the need for any added vinegar. You can either keep it refrigerated or water-bath can it. I start off by saving any and all peppers that turn red - pull off the stems, slice roughly, put in a ziplock and into the chest freezer. At the end of the growing season, most of whats left on the plants is red, and the still-green peppers I leave on a tray, most turn red as well. Then thaw out the frozen ones, saving any liquid, and use a blender or food processor to chop them up into a 'mash'. Add salt, and then into the fermentation chamber. You can also do this with green peppers as well. You can mix red and green, but the end result looks a bit like mud. I use 3 gallon ceramic crocks, plastic bags filled with water as the seal. however you can use a mason jar with a special lid, see link. The whole idea is an anaerobic fermentation, just like they use to make wine, or sauerkraut, or the old-fashioned way to make pickles. The longer you leave it, the more complex the flavor. Its better to do this in a cool environment, perfect is 65 - 70 F. You can add mango slices, apple slices, onion, spices, what ever. I don't add a 'starter' unless I'm making something with roasted chili - a whole other world of good. Because then, the roasting process killed the natural bacteria, and ya have to add something, I use a splash of kefir because it gives a great flavor and result. Each time its a bit different. Its also pretty safe - there are a bazillion utubes out there on how to make sauerkraut, its the same process. When its done fermenting, for me usually 6 weeks, I run it through a food mill to remove the seeds and skin. Its still 'alive', so be careful because its still fermenting and can pop off lids and such. I do about 15 quarts of finished sauce a year. It doesn't last. There is a vegetarian biryani in from Olive Trees and Honey: A Treasury of Vegetarian Recipes from Jewish Communities Around the World. If you use oil rather than ghee, it is dairy free. The vegetarians/vegans like it as a main and it can serve as a side for the rest. It has a layer of rice, then a layer of vegetables including garbanzo beans and topped by another layer of rice mixed with nuts. Vegetable Biryani RICE LAYER: 3 tablespoons ghee ( Indian Clarified Butter ) or vegetable oil 2 cups white or brown basmati or other long-grain rice 4 cups water (5 cups for brown rice) 2 teaspoons ground turmeric About 1 1 ⁄ 2 teaspoons table salt or 1 tablespoon kosher salt VEGETABLE LAYER: 1 ⁄ 4 cup ghee or vegetable oil 1 large onion, chopped 1 1 ⁄ 2 teaspoons black or yellow mustard seeds 1 teaspoon poppy seeds 1 teaspoon ground coriander 1 teaspoon ground cumin 1 teaspoon ground turmeric 1 ⁄ 2 teaspoon ground cinnamon 1 ⁄ 4 to 1 ⁄ 2 teaspoon cayenne 3 small or 2 medium-small eggplants, peeled and diced, or 3 cups cauliflower florets 1 large zucchini, diced 1 large red or green bell pepper, seeded, deribbed (white removed), and diced 1 cup lima beans or green peas 2 cups tomatoes purée, or 1 cup water mixed with 3 seeded and diced plum tomatoes 1 teaspoon sugar About 1 teaspoon table salt or 2 teaspoons kosher salt 3 ⁄ 4 cup cooked or canned chickpeas (optional) NUT MIXTURE: 1 ⁄ 4 cup ghee or vegetable oil 2 ⁄ 3 cup raw slivered almonds 2 ⁄ 3 cup raw cashews 2 ⁄ 3 cup golden raisins 1 ⁄ 4 cup chopped fresh cilantro for garnish 1. Bring to a boil, cover, reduce the heat to low, and simmer until the liquid is absorbed, about 18 minutes for white rice; about 40 minutes for brown rice. 3. To make the vegetable layer: In a large, heavy saucepan, melt the ghee over medium-high heat. Add the onion and sauté until soft and translucent, about 5 minutes. Add the mustard and poppy seeds and sauté until they begin to pop, about 30 seconds. Reduce the heat to low and stir in the coriander , cumin, turmeric, cinnamon, and cayenne. 4. Increase the heat to medium-high, add the eggplants, zucchini, and bell pepper, and sauté for 2 minutes. Stir in the lima beans , tomato purée, sugar, and salt. Bring to a boil, cover, reduce the heat to low, and simmer until the vegetables are crisp-tender, about 10 minutes. If using, add the chickpeas. 5. To make the nut mixture: In a small, heavy saucepan, melt the ghee over medium heat. Add the nuts and sauté until golden, about 3 minutes. Stir in the raisins. Remove from the heat. 6. Spread half of the rice in the prepared dish and top with the vegetable mixture. Combine the remaining rice with the nut mixture and spread over the vegetables. 7. Cover with a lid or aluminum foil and bake for 30 minutes. Sprinkle with the cilantro. Serve warm. For vegetarian chili, I don't use a recipe. If not using canned beans, I soak dried beans overnight (or do a quick soak by bringing the water to a boil with the beans, turning off heat and letting them sit for a few hours). I usually use a mix of pintos and kidney beans or black and pinto beans. I saute onions. Add some other diced vegetables - bell peppers, summer squash and carrots are good. Add to the beans and pour in a can of diced tomatoes with the juice (or you can use tomato sauce or tomato paste and water). Add chili powder to taste (for 3 16 oz cans of beans, I start with about a tablespoon). Making it for our family where the grandkids don't like it too spicy hot, I usually add some ground cumin and oregano to flavor it without getting more chili heat than they will accept. In a shallow dish or bowl, mix together the flour, salt, pepper, and oregano. Coat chicken pieces with the flour mixture. In a large skillet, melt butter in the oil over medium heat. Combine all ingredients except pecans. Mix on low speed until moistened then on high for 2 minutes. Grease and flour a 10 inch Bundt pan. Sprinkle pecans on bottom and side of pan. Spoon batter to cover pecans. Bake 1 hour. GLAZE: 2/3 stick butter 1/2 c. blackberry wine 1 1/4 c. powdered sugar Combine butter, sugar, and wine, bring to boil. Punch holes in cake with ice pick and pour half of glaze over cake while in pan. Let stand 30 minutes. Turn out and pour glaze over cake. PARMESAN WINE RICE 1 tablespoon butter 1 medium onion, chopped 1 clove garlic, minced 1 cup chicken broth 1 cup uncooked rice 1 cup dry white wine 1/2 cup grated Parmesan Melt butter in heavy medium skillet over medium heat. Add onion and garlic; cook 8 minutes or until translucent. Stir in broth, rice and wine. Bring to a boil. Reduce heat to low; cover and cook 25 minutes or until liquid is absorbed. I had been meaning to try this since I first chose wine for the cookalong. Recent conversations about mussels and fennel finally got me to do it today for lunch. I winged it but here's approximately what I did: Saute about 3/4 cup small-diced fennel and a minced shallot in butter with a pinch of salt. Add some thyme, a pinch of saffron, and 1.5 cups or so wine. (I used Gewuertztraminer, as recommended in Patricia Wells' "The Paris Cookbook" for its slightly sweet note.) Reduce wine by half and add scrubbed mussels. Steam for about 3 minutes or until they open. If some open earlier than others remove them so they don't overcook. Once all the mussels are done, remove them from the pan and add a dollop or two of creme fraiche to the broth. Adjust seasoning to taste. I think that's about all I did. I ended up eating the full 2.5 pound bag, plus half a baguette to sop up the sauce. I made Ruthanna's French Bean Soup, and know it would have been wonderful if......I didn't burn it. Yes, I actually managed to burn soup. We were up in Oklahoma where I have a substandard set of pots and pans, basically camping gear, cause I don't want to spend a lot of money on another set of pots and pans. Anyway, the soup pot I used is very thin aluminum. It was already cooked earlier in the day, and tasting delicious. DH had to go on an errand, and while he was gone, I turned the soup back on to heat up for dinner, and sat down with my cross stitch. Big mistake. When DH got home, he headed for the kitchen,stirred the soup, and announced, "Did you know the soup is burning?" Aaahg! Oh, well, it was still edible, and I'll definitely make it again, but I was very disappointed that I did something so stupid. Ruthanna, I think I'm drawn to your recipes. I'm sure I've made more than one other of your recipes. If you had a cookbook, I'd probably buy it. I do have one question about the recipe. In the last part of the instructions you say to remove the cinnamon sticks, but there are no cinnamon sticks mentioned anywhere else in the recipe. I didn't have any, so I added a dash of cinnamon to the soup.
