Ramp, Lamb, Thank You Ma'am!

I have been going to Whole Foods almost everyday to check on if they have ramps. The ramp season only lasts a few days. If you miss it, you will have to wait till next year.

I couldn't believe the lady employee who works at the WF remembered to call me that they just got ramps in the store!

"Thank you ma'am, I will be right over"

I had leg of lamb left from Easter in the freezer. So I made Lamb with ramps and mango jam.

I hope she will remember to call me when fiddlehead fern arrives in the store.

I've never heard of ramps, till I came here. I'll bet I've seen it in the store though. I don't care for fiddleheads, don't see the excitement/attraction. But then my grandpa loved to take us hunting for "puff-balls" too and bring them home and fry them up. Didn't care much for those either.

Sherry, the kids didn't have much luck when they went hunting last night. But we just got back from doing a little dumpster diving behind the grocery store. It's Thursday and I find it's one of the best days to go snooping. Here's what we found to add to the Poopy Stew: ~2 rutabaga's, just have to cut the soft spots out and remove some leaves ~3 bunches of parsley, probably equals 1 bunch by the time we remove the black stems ~partial bottle of oyster sauce ~several heads of garlic, they are rather dried up but will add some flavor ~ a bag of rice, might have some soy sauce that seeped in but that won't hurt ~2 really nice zucchini, only the ends are damaged ~unsold rotisserie chicken, I'll throw in 2 and keep the other two for another meal. ~3 containers of raw oysters, they smell a little off but you won't notice once they are added. Thanks guys. Rob, I got a little silly putting that butterfly there. :-) Martha, here is what I did, roughly. I don't normally stick to any recipes. ---------------------- INGREDIENTS Ã¢ÂÂ¢ 1 cups peeled and grated parsnips Ã¢ÂÂ¢ 1/4 cup fresh squeezed orange juice Ã¢ÂÂ¢ 1 teaspoon grated orange zest Ã¢ÂÂ¢ ÃÂ½ teaspoon grated ginger root Ã¢ÂÂ¢ 1 teaspoon sugar Ã¢ÂÂ¢ pinch cracked black pepper Ã¢ÂÂ¢ ÃÂ¼ cup butter Ã¢ÂÂ¢ 3 sprigs fresh rosemary (remove stems) Ã¢ÂÂ¢ ÃÂ½ teaspoon tomato powder. Ã¢ÂÂ¢ 15 ramp bulbs and the white part of ramp stems. Ã¢ÂÂ¢ 2 tablespoons of fish sauce Ã¢ÂÂ¢ 2 gloves crushed garlic. Ã¢ÂÂ¢ A few spoons of dry vermouth to taste ---------------------------------------------------- Method: Ã¢ÂÂ¢ Caramelize garlic and ramps bulbs in butter. I'm looking forward - it will be at least a month until we see them here. I like them in omelets. One spring I stopped at what I thought was a lemonade stand run by a couple of young boys. Turned out they were selling ramps - I bought the rest of their inventory. It struck me so funny and I was thrilled.

Haha - nope, Elmer. Not jumping on an opportunity to be snarky, although you do certainly provide enough fodder for that . I am just suggesting that you'd have a better life than you seem to think you have here in the US. Yes, I've been to Australia. While beautiful and yes, they have so much to offer, I'm always grateful to come home. Although I'm not proud of the actions of an awful lot of people here in the US, I'm proud of my country. We've got fixes to make. But I'm in it for the long run. That seems to "challenge your own views". So be it. You got your panties in a wad about me some time ago (as you have with several others ..... you know who they are) and let's just agree to steer clear of each other. Y'want to start talking about silly insults? Perhaps just search on your own name ....

Have to ask - did you actually carve the lamb bone in a pattern? Looks beautiful and delicious - not always the same thing.

As far as foraged food - I'm not familiar with ramps. In Maine fiddleheads are a big deal. I think that it's partly flavor, partly sentimental, partly economic and also an indication of spring after a long winter.

If I remember correctly doucanoe has ramps growing all over her property. Maybe you could get her to send you some to plant.

Thank you everyone.

Ramps, (wild leeks) are being made upscale in many restaurants. In NYC, they are not cheap, $14.00 a lb.

agmss15, leg of lamb looks odd without the bone, yet the bone I had looked odd the way it was. So I deicide to give it a different look by carving it. It only took less than a minute to do.

Teresa, ramps would probably grow well in my very shady garden. May be I will give it a try.

Ramps and Fiddlehead Ferns
Probably grew wild where I grew up.
But I didn't know about them,
Nor would I ever have thought to eat them
If I had known!

But I did know about Puff Balls. and loved them! !
How I wish they grew here!
I seriously doubt that any one around here
Would have even the remotest idea
Of what to do with any of the above
If they could be found!
