There are numerous ways to do it - everyone has their own taste. I normally take my mashed potatoes and make them into a patty (like a hamburger), dip in egg mixture, then flour and then fry up until golden brown on each side or sometimes I dip in egg mixture and coat with panko crumbs and then fry up until golden brown.

I usually mix the egg into the potatoes but I like Dixiedog's idea, especially with the panko. That's got to be good.

I always mix egg into the potatoes to hold them together good, along with lots of onions, and lots of black pepper. Batter in panko or not. Teriffic food!

In the best of circumstances I will mix the mashed potatoes with egg and maybe a little dried onion...make into patties, roll in flour and fry...
But very often I just make the leftover potatoes into a patty and fry....no additions, no egg, no flour....and they are pretty darned good!

Mom mixed an egg in hers & coated w/ crushed corn flakes. Then fried them.

I loved her potato cakes so much that I wouldn't eat any mashed potatoes so that there would be leftovers to make potato cakes!

I add eggs and flour to my potatoes and then just fry them.

Thanks to all of you for your advice. I tried the method of dipping them in egg and then flour but they fell apart. I'm wondering if my mashed potatoes were too fluffy? Next time I'll try mixing egg and flour in them.

I forgot to add that I have to add a little flour to my potato and egg mixture to prevent them from being too thin. Hope the flour workis for you.

I just fry patties of plain leftover mashed potatoes in butter until a brown crust forms. It's easier in a non-stick pan, or well-seasoned cast iron. They've been a favorite of mine since I was a little kid.

I just did it that way the other day, without any additions, but fried in butter in a cast iron skillet till browned on each side. The were very good, but I bet the panko bread crumbs would be extra good, too.
