I'm not sure if it is granite. It may be quartz.

Quartz is more uniform in color but has the look of granite. Plus it's stronger.

The quartz content is not the only thing in granite giving it strength.

3cm granite does not need any underlayment. Nothing.

Add to that many of the more decorative granites (while not true granites) have been resin filled to strengthen them.

The "Impenetrable to microbes and bacteria" calim is also junk.
Stone is non nutritive.

As for use in commercial kitchens, no one is going to pay the $$ to have granite tested for a commercial space.

Most on TV are manufactured stone, inaccurately called 'quartz' [it is to quartz what particle board is to wood]. The companies provide it free [or at a discounted cost] in exchange for an announcement along the lines of 'countertops by Silestone' or whatever. Few natural stone companies have the national reach of 3M or Dupont, and so don't promote products in the same way.

Nothing wrong with manufactured if you like the look, but a degree of skepicism has to be used when evaluating thier other claims.

For instance, much was once made of the fact that manufactured stone can be used in commercial kitchens, natural cannot. This is due to the impossibility of proving that a given piece of natural stone has no pores or fissures that could harbor bacteria. But if you have good food handling habbits, natural stone is just fine, and if you have poor habbits, manufactured stone won't help you.

The reason why quartz is 'impenetrable to bacteria' is because its a less porous surface than granite. Although granite is not very porous at all, neither of those materials are anti-microbial. Bacteria and viruses will sit on granite counters for weeks, even if it is 'non nutritive'

If you want anti-microbial counters, look into copper/brass, and less so stainless steel. copper/brass/zinc counters have a certain effect that suffocates bacteria and viruses, its called the oligodynamic effect, you can look it up on wiki

I did some searching and this info is from the Food Network website. It is the set list for Everyday Italian and it states the following :

The countertop (Smooth countertop) is manufactured by Caesarstone. The surface is champagne limestone 877-9 quartz. Go online for more detail information at www.caesarstoneus.com.

That will depend on the exact type of 'granite.'

Many of the types are rated as impervious to water.
Nothing is going to penetrate them.

It is an argument that the man made counter folks keep raising with no evidence to support the claim.

Remember the wooden cutting board claims?
Wood MUST be worse.

Actual tests showed that the extractives preset in all woods are very effective at killing bacteria.
