best way to freeze scallops?

Monday I bought some lovely scallops for dinner with friends tonight. Unfortunately, a bug is going 'round and 3 of them have bailed out on me.

The scallops are in a plastic bag sitting in a bowl of ice in the fridge to keep them fresh. I need to cook half of them tonight for those of us who haven't been struck by the bug.

What should I do with the other half? Althought I like scallops, two nights in a row doesn't really appeal to me. Can I freeze them? If so, how? For what it is worth, they are "dry" scallops.

The big problem is that unless they are fresh off the boat, they are probably previously frozen and then thawed at the store. And refreezing any seafood isn't recommended. Where did you buy them?

I'd probably just cook them all, and then have them for lunch tomorrow. Sometimes you can't save everything.

I agree - they have been frozen to get to your market unless you live where you get them right off the boat - and even then I think they flash freeze them on the boat :)
I recommend seasoning them, sauteing them - do not over cook!- put on a cookie sheet, into the freezer for a few hours, then wrap and put in airtight container and freeze for another day. Foodsaver would be great for this of you have one.
I freeze leftover scallops for a one meal dinner just for myself when we have leftovers - which isn't often.
They will be fine incorporated into a recipe at this point.
But, i absolutely would not refreeze them uncooked.

I also dehydrate foods in my old Harvest Maid. I love it, it has a fan and a temperature setting, 9 large trays and it's great for making yogurt too. I get my dehydrating information from the Ball Blue Book and from Michigan State University's web site, Preserving Food Safely. I do freeze eggs, but I beat up two, put them into a separate container and use them for baking. I don't freeze milk because of that change in texture mentioned above. I like some things frozen and some things canned. I always blanch and freeze asparagus, then I thaw it, put it on a baking sheet, drizzle with olive oil, salt and pepper and roast it, just like fresh asparagus. It's pretty darned good (although not as good as fresh, LOL). I also freeze corn, but I can carrots and beans. I freeze celery and peppers, usually already chopped and measured, to use in salsa, Habanero Gold jam, chili, etc. I don't care for stuffed peppers but my stepmom tops and cores them and stacks them, one inside another, for stuffed peppers. She takes them out frozen, stuffs them and bakes them. I freeze french fries by the tens of pounds, and I've chopped and frozen onions but even double bagging them the whole darned freezer smelled like onion. I would think shallots would be the same, but maybe if you have a foodsaver it would help with the aroma. I dehydrate onions and shallots since Craftyrn sent me a jar of dehydrated onions and I found how handy they were! I freeze swiss chard and collard greens, just steam them and freeze them in ziplock bags. I even freeze sliced green tomatoes to fry in the winter and I grate extra zucchini and pack that into ziplock bags for zucchini bread in January. Oh, and welcome to the Cooking Forum. Here's the best guidance. Freezing Peaches or Nectarines Preparation - Select well-ripened fruit and handle carefully to avoid bruising. Sort, wash and peel. Syrup Pack - Use 40 percent syrup. For a better quality product, add 1/2 teaspoon (1500 mg) ascorbic acid per quart of syrup. Put peaches directly into cold syrup in container - starting with 1/2 cup syrup to a pint container. Press fruit down and add syrup to cover, leaving headspace. Place a small piece of crumpled water-resistant paper on top to hold fruit down. Seal and freeze. Sugar Pack - To each quart (1 1/3 pounds) of prepared fruit add 2/3 cup sugar and mix well. Stir gently until sugar is dissolved or let stand for 15 minutes. To retard darkening, sprinkle ascorbic acid dissolved in water over the peaches before adding sugar. Use 1/4 teaspoon (750 mg) ascorbic acid in 3 tablespoons cold water to each quart of fruit. Pack into containers, leaving headspace. Seal and freeze. Crushed or PurÃÂ©e - Coarsely crush peeled and pitted peaches. For purÃÂ©e, press through a sieve or puree in a blender or food processor. (Heating pitted peaches for 4 minutes in just enough water to prevent scorching makes them easier to purÃÂ©e. For better quality, add 1/8 teaspoon (375 mg) ascorbic acid to each quart of fruit. Here are a few recipes for ones that are usually in my freezer. TOMATO BASIL BUTTER 1 Tbs. olive oil 1 1/2 cups peeled, seeded and chopped tomatoes (about 1 lb.) 2 tsp. minced garlic 1/2 cup sweet butter softened 2 tsp. grated lemon rind 1/2 tsp. salt 1/8 tsp. pepper 1/4 cup minced fresh basil Heat the olive oil in a small skillet. Add the tomatoes and garlic and saute, stirring occasionally, for about 10 minutes or until the tomatoes form a puree that will mound. Let cool. Put the butter in a mixing bowl and beat in the tomatoes and remaining ingredients. Roll into a log shape, wrap well, and refrigerate or freeze. Ideas: any type of fish, chicken breasts, green vegetables RED WINE BUTTER (makes 1/2 cup) 1/2 cup good quality red wine 3 shallots, finely chopped 1 tsp. red wine vinegar 1/8 tsp. salt 1/8 tsp. freshly ground black pepper 1/2 cup unsalted sweet butter In a small saucepan, boil down the wine, shallots and vinegar until only two tablespoons remain. I must admit that I never liked the broccoli I had frozen. You cut it up, blanch it and then freeze, spread out on cookie sheets, then bag. It was always soggy and disappointing. In place of broccoli, I now grow Gailan, which tastes like broccoli but is much easier to grow, yields more, and freezes magnificently.

I have frozen scallops, fish and prawns that had been frozen before with no problem. It isn't that refreezing them makes them dangerous in any way, it's just that the quality suffers somewhat. Whenever you freeze meat or seafood, the ice crystals puncture cell walls, leading to juice leakage. Home freezers also do not freeze as rapidly or as solidly as commercial flash freezing, and the temperature fluctuates more, both of which exacerbates the problem. If you do freeze something as delicate as scallops, it is best to freeze them as quickly as you can, which means freezing them individually on a pan and then transferring them to a container with as little air as absolutely possible.

Cooking them before freezing won't make any difference in terms of spoilage, but it will make it almost impossible for you to reheat them without them ending up overcooked.

Unfortunately, because they are so delicate, scallops do not freeze well at the temperatures most of us can generate in our freezers.

If you can lay your hands on some dry ice, that is the best way to freeze them.

Well....they won't make you sick to refreeze them....but they will lose a lot of moisture....so pick your choice of second best....even if you cook them and freeze them they will still be dry...

Thanks all for the very good suggestions of what to do. Right now I'm glad 3 folks bailed out on me (although I'm not glad they are ill). I would never have had enough for entree size portions if everyone had shown up for dinner. As it was, I just cooked them all and they were all consumed!
