Wickles Pickles

Somebody here recommended these guys and I would like to thank you, whoever you are! I'm not really a big pickle fan, but the other day I was browsing through the condiments in a supermarket that I don't frequent very often and all of a sudden I saw Wickles Pickles and remembered that somebody here recommended them and since we were having hot dogs for supper that night I thought that would be something good to try!

Wow - these babies are good! Hot, sweet, spicy, tasty little guys! Thank you, whoever you are :)

Ann, I love Wickles! I use to buy them from a local pickle maker who sold out his recipe to this larger company. I will tell you my dirty little secret as they are more expensive than the local guy was--not terrible--but we eat these way too much and I exceed my pickle budget. I buy bread and butter pickles when they are BOGO which is frequently. I drain the bread and butter pickles then put them in the Wickles juice that I have saved. After a week you can't tell the difference. I do change out the Wickles brine periodically.

I hate to see that wickedly delicious juice go to waste once we've finished a jar of the pickles. I've started adding a can of drained baby corn that I find in the oriental section of the grocery. Since they're so thick, I generally let the filled jar sit for about a month before eating and they're delicious. In fact, DH and I munched a few with our pizza last night. I'm glad to hear that Wickles are popular in other parts of the country. They're produced by a family in Alabama using an old family recipe.

Kids at school grew cukes in these neat hydroponic "towers". I asked teacher if I could take a few and make pickles. Made a bred & butter pickle brine... vinegar, salt, sugar, "seeds and stems", added some thinly sliced onion and sliced cukes. Got a few EW faces from HIGH SCHOOL kids who had NO idea that pickles come from cucumbers?!? Most were eager to try. Those who I decided where just being overly dramatic... asked to opt out. I have made that brine just for the brine... some goes on HOT potates before it becomes potato salad & other veggies can become pickles, not just cukes.

Best macaroni salad?

After seeing this thread the other day, I decided to give Ree's macaroni salad a try. DH won't eat a macaroni/pasta salad that isn't mayonnaise based, so I'm a bit limited there. I made several substitutions and additions, because I didn't want to go shopping and used what I had in the pantry. And DH insisted on having peas and boiled eggs in it. Those are his "musts" for macaroni salad. We both loved the result. Obviously, I didn't have that specific pickle; instead, I used sweet pickle relish and some juice from escabeche I canned last summer. How's that for spicy? DH was also concerned that it didn't have mustard in it. He kept trying to get me to put ingredients in it that I used in my regular go to salad. I wanted different. The dressing Ree made accomplished that. He did suggest that I make it again and add shrimp to it. Sounds good to me. I rarely miss a Pioneer Woman episode, but must have missed that one. Thanks for guiding me to it.

Your favorite non-cucumber pickle...

I've only done lacto-fermented pickles and refrigerator pickles. I've eaten store-bought kinds as well. Here are my preferences: Chile sauce (lacto-fermented, with vinegar added; cooked before fermentation; add probiotics before fermentation, after it cools sufficiently from cooking, but while it's still very warm) Radishes (lacto-fermented, without vinegar added; they turn pink/red inside) Peppers (with cardamom added; probably any kind of pepper pickle, almost) Sauerkraut (never made it, but I like it; it's pickled cabbage, lacto-fermented) Sempervivum (I think tectorum; lacto-fermented, without vinegar added) Carrots (lacto-fermented without vinegar added) Some of those I tried with/without vinegar I haven't tried the other way. I also like to use the brine from previously lacto-fermented stuff to make refrigerator pickles out of cheese strips. I'm not a fan of lacto-fermented large zucchini with vinegar added, although I like raw zucchini. I'm not fond of store-bought pickled cactus pad strips, but I like unpickled ones in stir fry. I like dill pickles, but I don't like sweet pickles that much (sweet pickles are okay in very small amounts). I like to use left-over dill pickle brine from store-bought pickles to refrigerator pickle stuff. I haven't historically added a lot to flavor my pickles (although I might prefer it). I want to lacto-ferment Jerusalem artichokes (and try adding some to other ferments, to speed the process).

Ann, I first read the title of your post as...Wrinkles Pickles and of course I couldn't pass up the opprotunity to say something like... not our fault if you have a wrinkled pickle!

I've not seen Wickles around here but if you ever run across a jar of Tony Packo's Sweet Hots give those a try also.
Trivia: Tony Packo's in Toledo Ohio was made famous on M*A*S*H.

I found the word! I was reading the cooking mag that I got in the mail today. The term used for what I suggested above is "repickled". Also, my favorite Wickles type pickles are Nathan's Sweet Horseradish pickles which I am addicted to.

Linda--that's funny!!!

If you can't find Wickles with the pickles and olives, look for Nathan's (same concept) in the refrigerated section. In my store it's along with sauerkraut, hot dogs, and other refrigerated pickles.

I buy wickles at the Cracker Barrel country store. If your local store doesn't carry them remember, most places have a way for customers to request items.

Never heard of them before. Are they a regional thing?

I'm so bad with names, I can never remember anything if I don't write it down, but anyway, one of the big national brands had a "sweet & hot" or maybe it was "sweet & spicey" pickle that I bought a few times that was great. I loved that "bite" of the hot pepper with the sweet pickle but I haven't been able to find them for a long time. It must have been a short term thing they were doing or maybe not everyone liked them as much as I did and they stopped making them!

Since this "wickles" brand isn't available here (and what a great name that is lol!!) does anyone know of a bigger brand that makes a sweet pickle with a hot or spicey bite to it?

Maybe I'll try making my own! I'm planting cukes for the first time this year and I chose a pickling type because I want to start canning as well and decided that along with jam, making pickles would be a good entry to the canning world.

Thanks!

I always assumed they were regional since they're made by a family in Dadeville, Alabama. The name comes from people requesting more jars of those "wicked pickles" from the Sims family around Christmas time.

Here is a link that might be useful: http://www.wickles.com/

Never heard of them before but I'll be looking for them for sure. Thanks for the heads up Woodie! If they are AL based I'm hoping to find them here in OK.
