What to do with super thin 'chicken steaks'?

When I was at the Mexican market yesterday, I saw "chicken steaks" for $1.99 a pound. Turns out, it's chicken breast pounded super thin.

What would you make with these? One of the ideas I have is painting them with various fillings and rolling them up like a jellyroll -- how much stuffing/rolling can I do and still make sure they cook on the inside?

All the time I've spent pounding and tearing chicken breasts for various recipes -- and now I'm drawing a complete blank!

Of course you can stuff and roll them! I like to brown the outside then finish them off in the oven. A thermometer will help you determine when the chicken is done on the inside. Now let's see...you could use a stuffing mix, ham and cheese, herb butter, thinly sliced vegetables...

...spinach, bleu cheese or ricotta and chives, wild rice, pasta, crab, shrimp, sausage or bacon. You really can stuff those with anything you like!

Can't remember where I got this, but it's really good! I add a dash of crushed red pepper flakes to the breading for the steaks AND to the cream gravy, along with a dash of paprika to both Chicken-Fried Steak Ingredients: 1 1/2 pounds of top-round steak 2 cups of flour 3 eggs 1/2 cup of milk or buttermilk 1/2 teaspoon of salt 1 teaspoon of cracked black pepper (can also add cayenne to add more heat). Lard or vegetable oil Method: Cut your top-round steak into four pieces. Pound beef with a meat tenderizer until flattened and almost doubled in size. Place flour in a large bowl and season with salt and pepper to taste. Mix eggs in another large bowl with milk. Take piece of tenderized beef and coat in flour. Dip coated beef into egg mixture and then dip back into flour again. Heat on medium enough oil or lard to fill halfway up the sides of a cast-iron skillet. When a drop of water makes the oil sizzle, it's ready for frying. Take the coated beef and place it in the skillet. When the blood (er, red-meat juice) starts bubbling out of the top of the steak (about three to four minutes) gently turn it over with a long fork (using a spatula can cause the oil to splash out of the skillet). Cook another five minutes and then take the chicken-fried steak out of the pan and drain on a paper-towel-lined plate. Repeat process for remaining cutlets. And while you're frying the others, you can keep the cooked steaks warm in the oven. Cream gravy Ingredients: Two tablespoons of pan drippings, bacon grease or vegetable oil Two tablespoons of flour 1 1/2 cups of milk 1 teaspoon of cracked black pepper Salt to taste. Method: Combine fat with flour in a hot skillet, continuously stirring, cook on medium for a couple of minutes until a dark roux is formed. Add milk slowly to skillet, and mix with roux using either a whisk or wooden spoon (be sure and press out any lumps). Turn heat to low and continue stirring until mixture is thickened, a couple more minutes. Add pepper and salt to taste. If gravy is too thick for your taste, you can thin it by adding either more milk or water a tablespoon at a time. Goes great with mashed potatoes, fried chicken, biscuits, chicken fried steak, grits, vegetables, rice or anything else you can imagine.

Ohh! that looks good. You can still make the Marlboro Man sandwich, but use lots less butter. Especially if you have waterless cookware! I just dices and cooked three large onions with no butter or oil. Just a tiny bit of water. You can do the same with the meat, just use a bit of oil, get some color on it, and put a lid on it. Need a bit of liquid for the 'sauce'? Use some broth with a little butter or cream, just a little. I won't use the hot sauce, but I did finally find some worchestershire sauce without garlic, so would add just a little for flavor. Still would taste great. I'll have to remember this one for the RV. Same thing and recipes will vary. There's going to be purists on anything who say it ain't _____ if it ain't _____... but what's called a garage sale is no different than a tag sale and a sub or a grinder and the endless arguments over chili. But then, some people take coleslaw dressing and call it BBQ sauce, or call chicken stew "white chili" or call hamburger a "steak"! And for that matter, many people/places make it with hamburger. Things change and evolve. Shepherd's pie being made with turkey? Or better yet, with vegetable granules called meat? Years ago I tried chicken/country fried steak with beef gravy and really liked it. Many places have a far tastier beef gravy than they do the white/milk/cream/country, etc gravy and when my cousin tried to straighten me out on it, I pointed out it's CALLED chicken fried steak WITH white/milk/cream/country, etc gravy so get off'n yer high horse! He conceded and even tried it and most often after, ordered it with beef gravy.

I love it diced and brownd then added to scrambled eggs or an omelette, you could use it in a quiche. Here are a couple of recipes we also enjoy. Lumberjack Hash from Cooking Light INGREDIENTS: 2 teaspoons vegetable oil 2 teaspoons butter 1 cup chopped onion 1 cup chopped green bell pepper 2 garlic cloves, minced 8 cups frozen shredded hash brown potatoes, thawed (about 1 pound) 1/2 teaspoon salt 1/2 teaspoon black pepper 4 ounces ham, diced 3/4 cup (3 ounces) reduced-fat shredded cheddar cheese INSTRUCTIONS: Heat oil and butter in a large nonstick skillet over medium heat. Add onion; cook 5 minutes. Add bell pepper and garlic; cook 3 minutes. Add potatoes, salt, pepper, and ham; cook 16 minutes or until potatoes are golden brown, stirring occasionally. Top with cheese; cook 2 minutes or until cheese melts. I bought some last week, I grilled half of them..they grilled in like 4 minutes! and the other half I breaded in a gluten free blend and pan fried in Canola..They were so good. And again cooked so quickly. Hubby had his as a sandwich, the boys ripped theres apart and dunked..I ripped mine apart and dunked into homemade cheese sauce...

But heck ya...stuff and roll...

Picatta was the first thing that came to my mind, too. But, if they're really nicely done I'd take the opportunity to make Chicken Kiev. I never seem to get my chicken just so for those.

Me too for Picatta or Marsala. Rolled is great with Rondele or Allouette cheese spread and then rolled and then dipped in egg and bread crumbs. Put in the oven with melted butter/garlic drizzled (more on the heavy side) over the top.

Like Fenworth I like Chicken Kiev so above is similar.

Chicken Fajitas would be great (slice the chicken in strips and grill).

This recipe is a winner !

SPINACH & PEPPER STUFFED CHICKEN BREASTS

Serves 4

2 TBS olive oil
2 chopped onions
1 clove garlic chopped finely
4 cups (125 grams) chopped spinach leaves
1 TBS chopped fresh leaves of mint
1/4 teasp herbes de ProvenÃ§e
1/2 teasp sea salt
1/2 teasp freshly ground black pepper
4 skinless, boneless chicken breasts 4 oz (125 grams) each

2 oz (50 grams) light Boursin cheese
1 TBS freshly grated parmesan
1 red pepper, seeded, quartered and roasted
1/2 cup (4 oz or 120 ml) white wine
1/2 cup (4 oz or 120 ml) chicken stock
2 x 15 ounce tins of chopped tomatoes
1/4 teasp crumbled strands of saffron
1/2 cup large-flake slow cooking porridge oats

1. Prepare red peppers and put into toaster oven or grill to roast. Chop spinach and set aside.

2. Heat 1 TBS of the oil in a large non-stick frying pan over medium heat and cook half the onion and all the minced garlic for about 5 minutes.
Add the spinach and cook a further 2 minutes or until wilted. Stir in the mint, herbes de ProvenÃ§e and 1/4 teasp each of the salt and pepper.
Remove from pan and put all into a bowl to cool.

3. Place the chicken breasts on a cutting board between two sheets of cling film and beat with a mallet or rolling pin until they have spread and are about 1/4 inch
(5 mm) thick. (Here I trimmed the edges of each one to make more of a tidy rectangle and put the cut bits into a ziplock in the freezer.)

4. With a fork, mix the two cheeses into the spinach mixture to combine. Spread the filling mixture over the chicken breasts, nearly to the edges.
Cut the red pepper into strips and lay them across the filling.

5. Starting at the short end, carefully roll up the breasts and place them seam-side down on a large platter or cutting board. Sprinkle them with the rest of the salt and pepper.

6. Heat the remaining 1 TBS olive oil in a large nonstick frying pan over a medium heat. Cook the remaining onion about 5 minutes, then add the wine, chicken stock, tomatoes,
saffron and a little more seasoning. Simmer on low heat, covered for about 8 minutes, then add the oats and stir.

7. Place the rolled chicken breasts on top of the sauce in the pan and continue to simmer, covered, for 20 - 25 minutes or until the chicken is completely cooked through.

8. To serve - place the chicken on a plate and spoon sauce around and over the top.
Serve whole if rolls are small, or even better - slice them thickly with a sharp knife to display the colourful filling.
