Has anyone made Zucchini Noodles

I am trying to eat healthier, I love pasta but was thinking of substituting it with zucchini noodles.

I have never tried them but it sounds healthier than pasta.

For those of you that have tried making them did you enjoy eating them with pasta sauce?? Did you have the same enjoyment???

Thanks

I don't know about "healthier" than pasta, but certainly lower in calories. Squash is pretty inert, it doesn't have much "nutrition" in the way of vitamins or minerals.

I've tried it, didn't like it. It was easy to overcook when sliced into strands and then it got mushy. Squash has little taste anyway but it was lost with a strongly flavored sauce. If you want to eat squash with pasta sauce, I think that's fine, I wouldn't go to the bother to prepare strands.

Has anyone made Pierre Hermé's Ispahan Loaf Cake?

I haven't made that cake but have made or eaten rose flavored desserts for Shakespearian, Elizabethan, or Persian dinners. Rose is somewhat of an acquired taste so if you want to make a pink birthday cake for your GD, I would stick with a more conventional flavor like strawberry or raspberry and make the Ispahan cake for an event where other desserts will be present. Here's a drink using rose water that is made in Iran for special occasions. ALMOND ROSE WATER DRINK (Schraab el'Loz) - 4 servings 3/4 cup blanched whole almonds 2 1/2 cups ice water 3/4 cup sugar 1/2 tsp. rose water 20 ice cubes In a food processor, grind the almonds until very fine. Transfer the almonds to a blender, add 1 cup of the ice water and process until frothy. Spread a large piece of doubled cheesecloth over the top of a large bowl and pour the almond mixture into the center of the cloth. Gather the sides of the cloth together to form a bag and gently squeeze the bottom in order to extract the "milk" of the almonds. When most of the liquid from the almonds has been extracted, open the bag and pour in 1/2 cup more of the ice water over the almonds and squeeze for another 5 minutes. Once the almonds have lost all their taste, discard them along with the cheesecloth. Transfer the almond "milk" to a small saucepan. Add the sugar and bring to a boil over medium heat until the liquid is thick enough to coat a spoon, about 20 minutes. Remove from heat and allow to cool to room temperature. Stir in the rose water. Refrigerate until completely chilled, about 2 hours. (You may freeze the almond syrup in a covered jar at this point. When ready to serve, defrost completely and continue with next step of recipe.) When ready to serve, place the remaining 1 cup ice water, almond syrup, and ice cubes in a blender and mix on high speed until frothy like a slushy drink (add ice cubes 2 to 3 at a time, tasting as you go so as not to dilute the drink too much). Serve in tall glasses or champagne flutes.

Mar53, Cool pan. Pfmastin, here is the recipe. Zucchini Lasagna 2 pounds ground pork (I like pork but a mixture of beef, veal, pork works) 1 onion chopped 1 stalk celery chopped 2 to 3 cloves garlic Italian parsley 1 to 2 tablespoons basil 1 teaspoon oregano salt, pepper 2 cans tomatoes 1/2 cup cream 1 pint ricotta 1/2 cup fresh grated Parmesan cheese 1 egg mixed together. 2 cups shredded mozzarella 2 medium size zucchini sliced into thin rounds Bechamel Sauce (seasoned with a garlic clove and fresh grated Parmesan) Directions Saute onions and celery in olive oil. When tender add the garlic and the ground pork. Cook until meat starts to brown and is no longer pink. Add the salt, pepper, basil, oregano and parsley. Add the cream and simmer until evaporated. Add the tomatoes and simmer for at least one hour. Spoon meat sauce into the bottom of a deep casserole. Place layer of zucchini over sauce. Top with 1/3 or 1/2 of the ricotta mixture (depending on whether you are making two or three layers). Sprinkle with mozzarella. Top with more meat sauce and another layer of zucchini. Repeat. Finish with a layer of the meat sauce and then top with the bechamel. Bake in a 375F oven for 45 to 60 minutes. Cover the top with foil if the lasagna starts to brown to much. NOTE: The zucchini gives off a lot of liquid. Next time I might saute the zucchini first. Here is a link that might be useful: Zucchini Lasagna

Why has no one told me about Ramen Noodles before?

Why in the world would you hold back the flavor pack because it contains salt, then add sea salt?? Contrary to the popular belief sea salt is not healthier. Salt is salt wether its table salt, sea salt, or rock salt. In fact, a strong case could be made that table salt is healthier because sea salt is made by evaporating sea water while table salt is made from natural deposits of sea salt that evaporated millions of years ago. The difference is that when the natural salts were evaporated from the sea, the sea was not yet polluted like it is today and on top of that, table salt is generally fortified with iodine, an element that is vital to the body and found in very short supply in our diets. But don't believe me, read what the Mayo Clinic has to say about salt..... http://www.mayoclinic.com/health/sea-salt/AN01142

"Chinese" Noodle Soup, anyone?
Q

I frequently make very similar soups, but I use fresh ginger instead of dried, or else I use ginger paste from a jar. I store ginger in the freezer, and it is easy to grate when frozen. Sometimes I use chili oil, but more often I add fresh chilies instead, especially when I have them in my back yard - right now I do not. I use bok choy instead of collard greens, and I often add Kaffir lime leaves and/or juice and zest, and I also have Yuzu fruit in my freezer and sometimes add juice and zest - mostly zest because the fruit is mostly seeds. I have chives growing continuously in my yard, and so I use those instead of green onions at the end and often garnish with cilantro, if I have that in my yard. I do use the dried ramen noodles, but I also add a couple of balls of rice noodles, just for a bit of variety. They come in golf ball size balls in a package of 16 or so and are therefore easy to add it, if I need more noodles. I also often add egg drop. Sometimes I will season with Japanese black vinegar (I do not like Chinese black vinegar - the Japanese has a better flavor) if I do not use lime or yuzu juice. I make these soups because I have so many of the ingredients in my yard, although I need to replace the lemongrass (I use lemongrass from a tube for now). I always have Kaffir lime leaves, and generally have the limes as well, but the yuzu makes fruit only seasonally, and so I freeze most of it. Sometimes I will use dried mushrooms and add the soaking water to the soup. I always have dried Shiitake mushrooms on hand, as they are inexpensive at the Japanese market that I go to. I tend to make Japanese or Thai versions of the soup and sometimes add shrimp to it.

Do you like zucchini? If so, you'll like using it in place of pasta. I use in place of pasta frequently....in tomato dishes and those with a cream sauce. You can also use spaghetti squash.

It has distinctive, nutty flavor when lightly sauteed or steamed. I don't know why people insist on overcooking it. It's a very healthy alternative to refined pasta....especially so if you don't peel it.

I have been keen to try this and want to get a mandolin to slice them.
Snidely is right, not a lot of nutrients, some vitamin A and C... that's about it.
BUT! for calories and carbs...
1 cup of enriched spaghetti noodles has 220 calories and 43 carbs.
1 large zuchinni has 3 calories and no carbs.

I am really hoping I like it!

Sue posted what I was going to--spaghetti squash is a great substitute for pasta. But don't expect it to taste like it because it doesn't. It's still good though and it's fun to "string" the "spaghetti".

Where are you getting your nutritional information? Zukes pack a nice little load of vitamins and minerals.

I use a mandolin frequently. Mine has several blades and I do make matchstick veggies a lot.

Rhizo, now I'm confused. I wish I had referenced the site I was looking at earlier, now I can't find.
The site I am looking at now does show quite a few more nutrients than what I had seen previously.
Either way I am anxious to try it!

This is what I found, maybe it's inaccurate?

It's of no matter to me, I've given up on trying to like squash. I tend to prefer veggies plain/unadorned and It's too bland for my taste.
