My Calabrian MIL made the most delicious eggplant balls yesterday for my son's First Communion party. I would like to share her recipe. She gave it me verbally so there are no exact measurements.
Rose's Eggplant Balls
Peel and slice an eggplant into 1/4" slices. Salt and put on a cookie sheet. Let the eggplant sit a while. Bring a pot of water to boil. Place the eggplant slices into the water until tender, then drain and place on cookie sheets to cool quickly. Squeeze the eggplant slices well. Then get a tea towel and squeeze them again in the towel to get as much moisture out as possible. If you have a food processor, you can chop the eggplant in it, but DON'T PUREE. If you use a chef's knife, chop the eggplant finely. Salt and pepper the eggplant to taste. Use 1 clove of garlic per eggplant. Mince and add to mixture, along with Italian flat-leaf parsley, parmigianno, Italian bread crumbs, and fresh or dry basil. Mix in one egg yolk per eggplant. Let the mixture sit in the refrigerator for a few hours to overnight. Remove from refrigerator, form balls about the size of medium meatballs, and roll in bread crumbs, coating thoroughly. Fry and serve. You can refrigerate these after frying, and heat up in an oven at 350' for about 40 minutes.
Yesterday was the first time that I ever had these, and with 17 adults and 4 kids at my party, they were gone in no time. I think there were at least 50. Not sure how many eggplants she used in her recipe. This is why it's so hard for me to duplicate what she cooks. She is amazing.
