Calling all smokers!

The outdoor cooking board is dead, so thought I'd try this here.

Larry smokes fish all the time. We have a Big Chief smoker. I watch those BBQ cookoff shows and the smoked briscuits and sausages just make my mouth water. They just look so hot and juice when they come right off the smoker. Can we do that in our Big Chief, or does it have to have fire under it too?
