Advice about undermount sinks & solid surface countertops, please

My Mom bought a house that has solid surface countertops (might be quartz) in the kitchen, and there's an undermount sink set into it. The hole for the faucet is cut into the counter, not the sink. The sink is really not working for her, and its enamel is somewhat stained, so we'd like to replace it with a single bowl stainless steel undermount sink. Is this really hard for a plumber to do? Is there any risk of the counter cracking? And is there any online source for stainless kitchen sink that any of you would recommend. Finally, is doing the single bowl sink a mistake? My sister says most people far prefer two compartments, but does this make any real difference for resale? Thanks for your help, Nabq
