How should I make this?

Cooking for a family of decided "dislikes" and "likes" is challenging. One big "like" is boneless, skinless chicken breast. Creamy/cheesy sauces and gravies are popular, but really, SBSIL and I both really shouldn't eat so much of them. Breading (baked or fried) is popular, but the appreciation for seasonings is limited. Stir fries are o.k., as long as the proportion of meat is high enough that nephew has enough once all the veggies are picked out. Sweet is a universal "like" so I had an idea...

I'd like to "bread" some chicken breasts with crushed almonds or pecans to pan saute or bake...but I want a sweet flavor as well. I could dredge in flour, dip in egg etc and then just make a sweet sauce, but I was wondering about a different route.

I've some peach jam, and thought of coating the chicken with that and then pressing the almonds into it. Anybody ever tried something like this? Would enough almonds stick, do you think? Perhaps I should dredge with flour and then sub the jam for egg instead? Then again, would the jam tend to burn before the almonds crisped?
