ice cream makers

Hello, everyone.

I am looking for recommendations for a good ice cream maker. I don't want one that I need to use salt/ice, and I would prefer not to get one that needs to have the bowl frozen.

Anyone have any suggestions?

Thanks,

Gail

I just picked up a Cuisinart ICE-20 a few months ago and love it. It does require that you freeze the bowl, but I just store mine in the freezer so it's ready to go. I got this on the recommendation of David Lebovitz, all around ice cream guy and author of The Perfect Scoop. I've made sorbets, frozen yogurts and ice creams in it and all do well. At only $50, it's something that I can use a dozen times a year and not feel too guilty about buying or keeping around the house.

For something with no ice, salt or prefreezing, you'd have to get one of the commercial style compressor machines. They're a lot more expensive and I've read mixed reviews on the more reasonably priced models like the Cuisinart ICE-50BC ($250 or so). I think you'll end up spending $400-600 to get a decent compressor style machine, based on the research I did when looking to buy my ice cream maker.

Sorry I can't give a specific recommendation on the compressor style machines, but I really do like the little one I have.

Bri, I have that same ice cream maker and I really like it. Like you, I just keep the bowl in the freezer, but I'm thinking I'd like to have an extra bowl.

Maybe for Mother's Day....

I have a Simac Il Gelataio 1600 like the one I found on eBay linked below. I've owned a few different machines over the years and am happy with the Simac despite two cons. 1. The unit is very heavy. Combined with its size, it's awkward to move around. I don't have a spot large enough in my kitchen to dedicate just to the Simac so I can't store it on my counter. When I use it, it needs to be moved out of, and then back into, the garage. 2. The bowl isn't removable for cleaning. Some Simac models do have a removable bowl. On the positive side, the thing is built like a tank. I can imagine it lasting for many more years to come. Ice cream comes out great every time, and it's incredibly easy to use. Bellsmom, Ice cream freezers are a pretty mature technology, and Cuisinart isn't likely to turn belly up during your warranty period, so why not? :) I like that the 100 has the different paddles, though I don't know how big a difference it makes. I donated counter space that wasn't all that useful anyway to mine, but I wish it did a magic appear/disappear act. :) Yours should be fine in the pantry if you have a solid counter and a plug. It's sure to vibrate a lot and needs some clear space for the circulation of warm air (i.e., not right up against your foodstuffs because they want cool pantry, and a freezer will warm it up). Those are the biggest problems with putting it in the pantry. Do you have a laundry room where you could put it? Maybe keep a cloth over it when not in use to keep away lint, etc. Or even a protected porch? The lack of water shouldn't be a big issue because of the removable bowl. You can take all the main parts to the sink for cleaning (maybe keep a little dishpan with the machine to dump them in, and just bring a sponge or rag and a small bowl (or the dishpan) of water to the machine for wiping it down. Kids love making frozen treats, and it's also a great way to teach them about what's in what they're eating. Be really honest with yourself, however. Do you really want to be carrying the ingredients back and forth? And the clean-up? Would you rather have it on the kitchen counter? Would giving up freezer space be no issue because you'd be using the space you usually fill with bought ice cream for the bowl of a non-freezer model? Will you use it more if it's just ready to go? Will you use it less if you have to unearth the bowl from a pile of stuff in the freezer? I know the arias are beautiful, but imagine yourself doing the conducting. Read through the instructions online and imagine yourself doing the work. See which model you'd really rather have to fit into your real life and way of doing things, and your particular cooking setup. You're already well informed. That's the next good step to making a choice.

Can I use 1% milk in ice-cream maker?

Frozen mango chunks (bought in a bag from freezer section) blended with skim milk in a blender can be just about as thick as ice cream (if you use more of the frozen fruit) or smoothie-like if using more of the skim milk.Usually doesn't need sweetener but if desired one packet of stevia would do the trick. Frozen ripe banana chunks blended with skim milk also provide a lot of creaminess but I don't really eat them any more due to calories. :) I was wondering about the low cal possibilities with the ice cream maker and appreciated everyone's info here. Husband just made a batch with full blown cream and sugar, with coconut flavoring, it was great but these days I'm not interested in anywhere near that much fat or sugar! Had one bite, it was enough :) Lost 20 lbs recently amazingly easily by just not eating overly fat foods and starches, wish I'd done it years ago :) It is surprising how quickly you get used to less fat and added sugar, then when you taste something with all that stuff in it, as I just did, it's like, man, way too much!! (Of course the fruit contains sugar and even skim milk has some, so it is still a dessert but at least it lacks the added fat and sugar.) I've read that some people use guar gum, I'm not sure where to buy that, anyone know? This post was edited by urthcreature on Sun, Aug 17, 14 at 15:30

I made the chocolate ice cream recipe I posted above on Saturday, but I realize now that the nuts should not exceed 1/2 cup. In fact, I am now using a fairly different recipe, and I will post that when I get home. I reduced the sale to 1/32 tsp (one pinch), and I used 3 egg yolks plus one whole egg. Also, I used 5 oz of chocolate instead of only 2, and I think I used 3 tbsp of cocoa, but the same amount of sugar. Anyway, it was sweet enough. I was out of Frangelico (I used it in egg nog), and so I had to use Hazelnut Kahlua, but that was okay. I only used 2 tbsp and I should have used four because the ice cream came out very hard after spending the night in my freezer. The new machine works like a dream, and it is so much quieter than the other ones I have. Also, it is so much easier to add ingredients. I poured the entire custard mixture into the bowl (with the dasher) with the lid completely off, and then toward the end, I added the nuts through the window opening. The machine shut off by itself when the ice cream was done (about 35 minutes) and went into freeze only mode, but I removed the bowl promptly so that it would be easier to remove the dasher. My only issue is that the dasher has some "teeth" that are somewhat difficult to get the ice cream off of, and none of the parts can go into the dishwasher, but I am okay with that as long as no one else ever puts them in there. You cannot use metal utensils with it either, and it came with a very nice plastic scoop for removing the ice cream at the end. I am already looking forward to my next batch. I bought some vanilla beans (rather expensive) for French Vanilla, and so I will probably make that next, since strawberries are not in season. I would make coconut ice cream, but Kevin does not like it. Still, I can make small batches for myself easily enough, and so I will make a batch of that as well. I have a coconut in the fridge. Also, I used my new thermometer spoon for this recipe.

Annie, thanks for the idea of getting a second bowl. I was hesitant of the "frozen bowl" type because I would have to re-freeze between batches.

I'm not sure why I didn't think of a second bowl :)

Thanks,
Gail

Same one here, as per the advice of other forum members. I have only used it once so far, but I got it at the end of the summer. Looking fwd to using it for sorbets this summer. 50 dollars at Costco, Cuisinart 2 QT

Gail, I didn't think of either, until I was making frozen sugar free yogurt at Christmas and Makayla wanted to make chocolate ice cream. Suddenly, an epiphany!! A second bowl. LOL

I haven't gotten one yet, you understand, but I really like the machine and the second bowl option would be a lot cheaper.

It seems we all want a second freezer bowl! I have a hard time justifying it for just the two of us, but it would be fun to be able to make a couple kinds of ice cream at once! :)

Yikes, the bowl costs as much as I paid for the 2 qt whole thing!

I don't have room in the freezer for a second bowl but I have the same Cuisinart ICE-20 and it works great, the ice cream comes out great! I have a bag of frozen peas stored in the bowl, making use of every inch of freezer space :)

My daughter-in-law has the Cuisinart too, received as a gift from me a couple of years ago. It works well and I think it is a very good value at $50. Only negative I can think of is it's kinda noisy, but that's not a deal breaker.

I have the same Cuisinart model and it's great. I think I got mine on Amazon.com for $30. I've had it for about 7 years.

If you have a KitchenAid mixer, they make an ice cream bowl attachment. Freeze the bowl and use the paddle. Voila!!! I don't think it's as cheap as the Cuisinat but it sure makes a multi-tasker work harder!

I've made lots of great ice cream with my Cuisinart Ice Cream Maker.

I find that the ice cream hardens and freezes to the sides and bottom of the frozen bowl while the center stuff that is being churned stays softer.....
So when I scoop it out into the storage container, some of it is soft and creamy while other parts are frozen to the sides. This leaves me with an inconsistent texture, even after refreezing in the storage bowl.

I have tried continually scraping the sides of the bowl with a spatula or chopstick as it churns...but maybe it is because my maker bowl is just too cold?

Have any of you observed the similar "part hard, part soft" as it comes out of the maker bowl...and what have you done about it?

Thanks,

ken

arandygail: I have a Cuisinart ice cream maker that has it's own freezing unit and I LOVE IT! I want to bring my "cold" mixture to the 1.5 qt. container, pour it in, turn it on, and have it done in an hour.
