Needing help with a knitting term in my pattern

My pattern tells me to K up 1 Which I assume is Knit up 1. I don't know what they mean by this so could someone please help me? Thanks

K UP 1 - pick up and knit the stitch in the row below.

I don't understand either. How can you "increase" 1 stitch every so many rows "until a certain amount of stitches remain"? Normally, you would be decreasing stitches until a certain number remain.
